How to Make Kabsa


This kabsa rice dish is the equivalent of the Italian risotto or Spanish paella. This is a traditional rice dish in the south Mediterranean and combines wonderful spice flavors with the topping of chicken or meat and toasted nuts. These dishes are mainly made from a mixture of spices, rice (usually long-grain basmati), meat and vegetables. There are many kinds of kabsa and each kind has a uniqueness about it. The spices, rice and meat may be enhanced with almonds, pine nuts, onions and raisins. It's very fulfilling and very worth the time it takes to make.

Ingredients

2 cups long grain Uncle Ben's rice
1 1/2 cup chopped ripe tomato
2 cups chopped onion
1/2 cup white raisons soaked in 1/3 cup water
1/2 cup sliced almonds
1/2 cup pistachios
1/2 cup pine nuts
1 1/2 tsp salt
1 tbs ground cardamom
10 cloves
1/2 tsp nutmeg
1/2 tsp Dede's 7 spices
1/4 tsp cinnamon
1/4 tsp ground black pepper
4 cups chicken broth
6 tbs butter
2 tbs olive oil

Pre-cooked chicken in broth:

2 chicken breasts or 2 thighs and 2 drumsticks
6 cups water
1/2 cup chopped onion
2 bay leaves
2 cinnamon sticks
1 tsp salt

Directions

NOTE: IF USING DEDEMED KABSA SPICE, THEN REPLACE CARDAMOM, NUTMEG, 7 SPICES, CINNAMON, CLOVES AND BLACK PEPPER WITH 3 TBS KABSA SPICE.

In a large pot place chicken, water, onion, bay leaves, cinnamon stick and salt and let cook covered on low heat for about 1 1/2 hour.

In a large bowl rinse rice and pour off excess water, mix in seasonings.

In another large pot add 2tbs olive oil and 1 tbs butter, then add chopped onions and chopped tomatoes and cook for 10 minutes on medium heat. Next add rice, mix and then add 4 cups of chicken broth from the cooked chicken, stir and then add 3 tbs butter. Let come to a boil and then turn down to low heat, cover and let cook for 45 minutes. In a small pan, add 2 tbs butter and stir in nuts and raisins, let cook until all are evenly brown, set aside for garnish. In the mean time, pull apart cooked chicken and remove any bones.

After 45 minutes, fluff rice with a fork and let sit another 10 minutes.

To present dish, pour out the rice into a large serving dish, place pieces of chicken on top and then put the nut and raisin mixture on top of that. Serve with yogurt or salad.

Ingredients

2 cups long grain Uncle Ben's rice

1 1/2 tsp salt
1 tbs ground cardamom
10 cloves
1/2 tsp nutmeg
1/2 tsp Dede's 7 spices
1/4 tsp cinnamon
1/4 tsp ground black pepper
4 cups chicken broth
6 tbs butter
2 tbs olive oil

Pre-cooked chicken in broth:

Traditional Bahraini Chicken Machboos Recipe

Chicken Machboos is the national dish of Bahrain. A spiced chicken and rice dish, this recipe is thoroughly authentic and guaranteed delicious.

1.00 kg Basmati rice
30.00 g Knorr Savoury Rice Seasoning
500.00 g Tomato
2.50 kg Chicken
500.00 g Onion
100.00 g Coriander
2.00 pc Green hot pepper
3.00 pc Black dried lime
18.00 g Arabic mixed spice blend (Baharat)
12.00 g Turmeric powder
8.00 g Cumin
16.00 g Cinnamon Powder
10.00 g Cardamom Powder
18.00 g Garlic Cloves
4.00 g Ginger
75.00 g Butter
25.00 ml Knorr Lime Seasoning
75.00 ml Water for lime seasoning
75.00 ml Rose water
80.00 g Oil
50.00 g Knorr Lemon & Herb Seasoning

Preparation

1. Cut the chicken in half. Heat the water and leave aside. In a small bowl, mix the Baharat, turmeric, cumin, and cardamom together and add to the mixture one teaspoon of Knorr Lemon & Herb Flavoured Seasoning. Sprinkle half of the spice mixture on the chicken halves.
 

2. Heat oil in a large cooking pan, fry the onions until golden brown, then add to the pepper and the black limes - you must make a hole in each limes.
 

3. Add the chicken to the onion mixture and turn it over a few times in the pan. Sprinkle on the chicken a teaspoon of cinnamon and the rest of the mixed spices. Turn the contents all together so the chicken is coated with the spices, cover the pan and let it cook on medium heat for 3 minutes.
 

4. Add the garlic, chopped ginger, and tomato cubes to the pan and turn the ingredients in the pan a few times. Cover again for 3 minutes on medium heat. Sprinkle with the rest of the Knorr Lemon and Herb Seasoning and pour water on it while it is still hot.
 

5. Cover the pan and let it cook for about 1 hour, or until the chicken is cooked. Add the chopped coriander 5 minutes before you remove the chicken from the stock in the pan. While the chicken is cooking, wash the rice well and soak for 10 minutes in cold water, then drain.
 

6. Remove the chicken from the pan and put on an oven tray, brush with some oil and sprinkle with the rest of the cinnamon powder and grill in the oven until the chicken is golden brown.
 

7. Add the rice and Knorr Savory Rice Seasoning to the chicken stock, stir, then let it cook on low heat until the rice absorbs the stock and is almost done.
 

8. Sprinkle rose water and Knorr Lime Seasoning over the rice and place the butter pieces on top. Cover the pan and cook on low heat for 30 minutes.
 

9. Serve the rice on a large serving plate and place the grilled chicken halves on the top.

Preparation

6. Remove the chicken from the pan and put on an oven tray, brush with some oil and sprinkle with the rest of the cinnamon powder and grill in the oven until the chicken is golden brown.
 

7. Add the rice and Knorr Savory Rice Seasoning to the chicken stock, stir, then let it cook on low heat until the rice absorbs the stock and is almost done.

Ingredients

¾ cup cracked wheat or 100 g

2 cups water or 500 ml, cold

½ cup water or 125 ml, hot

1 cube MAGGI® Chicken Bouillon or 10 g

1 tablespoon butter

¾ cup dried apricots or 75 g, chopped

½ cup walnuts or 75 g, finely chopped

1 tablespoon ground cardamom

1 cube MAGGI® Chicken Bouillon or 10 g

2 cups water or 500 ml, hot

5 tablespoons pomegranate molasses or 50 ml

1300 g whole chicken, preferably fresh

1 medium onion or 150 g, chopped


Preparation

Soak Harees in cold water and allow to sit for 6 hours.

Melt butter in a medium sauce pan, drain and rinse Harees grain and add to pan, add Water and 1 cube MAGGI® Chicken Bouillon and simmer on medium heat for 5 minutes or until the Hareese is ½ cooked. Add chopped Apricot and Walnuts and Cardamom powder and remove from heat, cover and allow to cool slightly.

Wash the Chicken and make sure the cavity is empty. Gently spoon the Harees and Apricot stuffing in the cavity until full, truss the stuffed chicken, or tie the legs together with kitchen twine.

Place chopped Onions in the center of a deep oven dish (large enough to hold the chicken with an extra 3-5 cm space from the edges). And position the trussed chicken on top of the bed of onions.


Dissolve remaining 1 MAGGI® Chicken Bouillon cube in 500ml of Hot water, stir in the Dibis Raman and pour over the chicken, cover with aluminum foil and bake at 180c in a preheated oven for one hour.

After one hour remove aluminum foil and allow the skin to broil, while basting (every 10 minutes) with the rendered juices in the pan, until done. (30 minutes)

Cut chicken serve on a platter with the stuffing and rendered juices on the side.

Tips :     Chicken is cooked once the internal temperature of the thickest part of the thigh reaches 80c or 180f.

Ingredients:

1 2/12 – 3 pound chicken, cut into eight pieces
1/4 cup vegetable oil
2 medium onions, sliced
1 (12 ounce) can tomato puree
2 medium tomatoes, chopped
4 cloves garlic, crushed
2 medium carrots, grated
Grated rind of one orange
4 cloves
4 cardamom pods
3 sticks cinnamon
Salt and pepper to taste
1 pound long grain rice
1/4 cup raisins
1/4 cup sliced almonds

Preparation:

Sautee onion in oil until it begins to brown. Add chicken pieces, tomato puree, chopped tomatoes and garlic and stir for about five minutes over low heat. Stir in three cups hot water, grated carrot, orange rind, spices, salt and pepper to taste. Cook over medium heat, covered, about 20-25 minutes, until chicken is done.

Remove chicken. Set aside to keep warm. Stir rice into the liquid in the pan, and cook, covered over low heat for about 35 – 40 minutes, or until liquid is absorbed.

Put rice on a serving platter with chicken pieces arranged around the circumference. Toss raisins and almonds over all.

Even while it is cooking, its intoxicating aroma fills your kitchen and leaves you drooling. After it is done, the very first spoonful of chicken biriyani will leave you in trance mode and keep you yearning for more. The delicious flavour of chicken biriyani is exclusive by itself and fit for royalty. A handful of raisins and nuts in chicken biriyani adds to its charm and turn it into a lavish affair. The taste of chicken biriyani hardly leaves us in any doubt that why the dish originating in Iraq is now a global favourite.

Preparing this mouth watering dish might be a problem initially. Patience and lots of care are the chief mantra to cook chicken biriyani. Choose your ingredients with care, don’t rush and follow the instructions of the recipe cautiously. After it is done, if the grains are dry and don’t stick to each other, you have prepared a perfect plate of chicken biriyani. So, gear up and treat your kids with chicken biriyani.

Ingredients:

• 8 large pieces of chicken, washed and dried
• 1 cup basmati rice, washed, soaked in water for half an hour and drained
• ½ cup ghee
• 1 large onion, minced
• 2’’ ginger, minced
• 5 garlic cloves, minced
• 1 large tomato, minced
• ½ cup coriander leaves, minced
• 1 tbsp garam masala powder
• 1’’ cinnamon bark
• 3-4 green cardamom pods
• 2 black cardamom pods
• 2-3 cloves
• ½ tsp turmeric powder
• 2 tsp ground pepper
• ½ tsp salt

Method:

 
• Heat ghee in a pan over medium heat and sauté the minced onion, garlic and ginger for a couple of minutes.
 

• Add the chicken pieces and stir in the salt and spices.
 

• Cook for about 5 minutes over medium heat and then lower the heat and cook for another 10 minutes until the juices released from the chicken is nearly disappears.

Chicken biriyani is spiced up basmati rice with meat, egg and sometime veggies straight from the Middle Eastern cuisine. However, don’t mix up chicken biriyani with any other rice pilaf, it rules above all. The rice cooked under alternative layers of spic

Even while it is cooking, its intoxicating aroma fills your kitchen and leaves you drooling. After it is done, the very first spoonful of chicken biriyani will leave you in trance mode and keep you yearning for more. The delicious flavour of chicken biriyani is exclusive by itself and fit for royalty. A handful of raisins and nuts in chicken biriyani adds to its charm and turn it into a lavish affair. The taste of chicken biriyani hardly leaves us in any doubt that why the dish originating in Iraq is now a global favourite.

Preparing this mouth watering dish might be a problem initially. Patience and lots of care are the chief mantra to cook chicken biriyani. Choose your ingredients with care, don’t rush and follow the instructions of the recipe cautiously. After it is done, if the grains are dry and don’t stick to each other, you have prepared a perfect plate of chicken biriyani. So, gear up and treat your kids with chicken biriyani.

Ingredients:

• 8 large pieces of chicken, washed and dried
• 1 cup basmati rice, washed, soaked in water for half an hour and drained
• ½ cup ghee
• 1 large onion, minced
• 2’’ ginger, minced
• 5 garlic cloves, minced
• 1 large tomato, minced
• ½ cup coriander leaves, minced
• 1 tbsp garam masala powder
• 1’’ cinnamon bark
• 3-4 green cardamom pods
• 2 black cardamom pods
• 2-3 cloves
• ½ tsp turmeric powder
• 2 tsp ground pepper
• ½ tsp salt

Method:

 
• Heat ghee in a pan over medium heat and sauté the minced onion, garlic and ginger for a couple of minutes.
 

• Add the chicken pieces and stir in the salt and spices.
 

• Cook for about 5 minutes over medium heat and then lower the heat and cook for another 10 minutes until the juices released from the chicken is nearly disappears.
 

• Throw in the coriander leaves and tomato and spend 5 minutes cooking them.

Ingredients

1 Kg Zubaidi (pomfret fish)
1 Tablespoon ground spices (ginger, dried lemon, cardamom, cumin, clove, cinnamon, black peeper)
1 Cup olive oil
1 Tablespoon lemon juice
4 Cups water
3 Onions, medium size
1 Celery stalk, cut into chunks
1 Carrot, cut into chunks
1 Lemon, cut into slices
2 Bay leaves
2 Green peppers, cut into julienne
1/4 Cup raisins
1/2 teaspoon saffron
3 Cup stock
1 tablespoon corn oil
4 Cup basmati rice, parboiled
2 Cup yogurt
Salt and papper

Method

- Clean the fish and leave it in salted water with some flour for 30 minutes.
- Rinse and drain in a colander.
- Make slits on both sides of the fish using a sharp knife.
- In a mixing bowl, mix half of the spices, half of the olive oil, lemon juice and season with salt and pepper.
- Marinate the fish, making sure that the marinade is covering all over the fish and into the slits. Set aside.
- Boil water in a large pan. Cut one onion into big chunks, add it to the water.
- Add celery, carrot, lemon and bay leaves.
- Add the marinated fish and let boil for 5 minutes. Take out the fish and set aside.
- Cut the remaining onions into julienne. Heat the remaining oil in another pan over medium heat and sauté the onions.
- Add green pepper, stirring the mixture for 5 minutes.
- Add the remaining spices, raisins, saffron and stock. Season with salt and pepper.
- Let the mixture come to a boil, then lower the heat and let simmer for 7 minutes.
- Grease a large non-stick pan with corn oil.
- In a large mixing bowl, mix 1 cup rice with yogurt. Spread to cover the bottom of the pan.
- Assemble layers of the fish, onion mixture, the remaining rice alternatively, seasoning each layer with salt and pepper, pressing down slightly.
- Cook over medium heat for 5 minutes, lower the heat, cover and let cook for 15 minutes or until fully cooked.
- Let cool. Invert the pan over a large serving plate.

Layered pomfret fish and Basmati rice

- Let cool. Invert the pan over a large serving plate.

Author's Note:
In this recipe the traditional way to cook it is underground but realistically that is just not possible for most of us so in this recipe you learn how to do it at home and work with what you have for almost the same amazing flavor. In the Gulf countries mandy is made from either chicken or lamb. I have also made a video so that you can see how we smoke rice for this dish. Watch it here. Here in Saudi Arabia we love to serve Salata Hara with meat and rice dishes. You can find that recipe below.

You also want to make sure the skin is left on the chicken. This is one of the keys for cooking mandy because the skin produces natural fat for it to cook in with the spices. This is why we do not use oil. You can use the shell of an onion then add a cube of butter and a bukhoor coal in the middle of the rice and chicken to smoke it. Just quickly add the lid and allow it to sit for at least 15 minutes. This dish will taste like it came from a pit or grill when finished.

Ingredients:

1 large chicken, cut up (I usually use chicken breast)
4 teaspoons mandy spice mix
2 teaspoons salt

Rice:
1-1/2 cups basmati rice
1 tablespoon butter
1 tomato, diced
4 whole cardamom pods
salt and pepper to taste
1 chicken bouillon cubes (I use Maggi rice or chicken)
3 cups water
 

Smoking:
3 tablespoons butter
shell of half onion (bowl shaped)
bukhoor coal
 

Preparation:

1. Wash chicken they dry with a paper towel. Cover chicken with spice mix, cover and allow to sit in refrigerator for a few hours.

2. In a non-stick saute pan on medium heat add chicken , cook chicken uncovered with no oil until tender and brown for 45 minutes (25 minutes on thick side, 20 on the other).

2. Next, In a 4-quart sauce pan saute add butter. Add whole cardamom, chicken bullion, salt, rice and water; stir. Bring to a full boil add chopped tomatoes then cover and reduce heat to low. Cook (do not remove lid) for 25 minutes.

3. Place cooked chicken on a plate reserving the pan. After the chicken and rice has cooked pour the rice into the saute pan used to cook the chicken. Place the onion shell with butter into the middle. Carefully place chicken around the pan. Add coal onto butter ans quickly shut the lid. Allow to smoke for 15 minutes. Serve.

Yields: 3 servings


Salata Hara Recipe

Every Arab country has a version of salata hara, this is the way the delicious spice is made in Riyadh the middle region of the Kingdom. Regardless of where you eat in Saudi Arabia you will be served cups of salata hara with every meal that contains chicken and rice. The spicy sauce
is perfect on top of it as well and easily be freshly made at home.

1 large tomato
1/2 cup fresh coriander
Juice of half a lemon
1/2 teaspoon salt
2 red chili peppers
2 teaspoons baharat spice blend

1. In a processor add tomato, coriander and chili pepper, lemon juice, baharat spice,
and salt.

2. Place in a container with a lid and store in the refrigerator until needed.

Yields: 1/2 cup

This classic Arabian dish is Saudi Arabian in origin, and is believed to originate from the nomadic Bedouin tribes centuries ago. Arabic cuisine has its roots in tent cookery. Nomadic tribes could use only transportable foods such as rice and dates, or their nomadic stock like sheep and camels in their recipes. As the caravans journeyed throughout the Middle East, new seasonings and vegetables were discovered and added to the existing repertoire. Each new discovery was incorporated into the diet in quantities palatable to a particular tribe - a fact that many cooks believe is responsible for the anomalies found in some Arabic dishes today. You can use lamb (or camel !!) in this dish, but it is more usual to make it with chicken nowadays.

Ingredients:

1 kg chicken piece 

500 g basmati rice 
2 dried limes, finely chopped 
250 g fresh tomatoes 
250 g onions, peeled and diced 
50 g garlic cloves, peeled and finely diced 
1/2 teaspoon salt 
1 tablespoon fresh coriander, chopped 
50 ml olive oil 
2 tablespoons kabsa spice mix (OR use the following spices, 1 teaspoon cardamom seed, 1 teaspoon black pepper, 1 teaspoon cumin) 

Accompanying sauce Ingredients 

250 g fresh tomatoes 
100 g fresh mint, leave 
5 g salt 
50 g green chili peppers 
water 

Directions: 

1 Slice the onion and garlic, cut the tomatoes in to wedges and chop the fresh coriander. 

2 Heat the oil in a casserole dish and add the onions, garlic - sauté for 3 to 5 minutes, then add chicken and cook for a further 5 minutes. Add the rice and sauté for about 3 minutes before adding the tomato, spices, salt and dried limes. 

3 Add water just enough to cover the rice mixture and bring to boil, turn the heat down and simmer for 15 to 20 minutes. 

4 Remove from heat, stir in the sultanas and almonds, then leave for further 10 minutes with the lid on. 

5 Remove the lid, stir well and serve with the following sauce. 

6 Accompanying Sauce. 

7 Skin the tomatoes and mix all the ingredients together, season to taste. 

8 Serve the Kabsa with the tomato sauce and flatbreads. 

9 NB. If making up the Kabsa spice mixture fresh - grind all the spices together in a coffee grinder or a food processor/mixer, or with a pestle and mortar.
