Ingredients
  • 4 chicken thighs, skinned
  • 2 tablespoons lemon juice
  • 2 egg whites, lightly beaten

  • teaspoon ginger, powdered
Procedure

Arrange the chopped peanuts on a pie plate. In one bowl, combine sugar, ginger, and cornstarch. Take another bowl to blend the egg whites and lemon juice in it as well. Dip the chicken thighs in the egg white mixture. Now roll the chicken in the roasted peanuts. Coat it properly and cook them in the fryer. Let it cook for about 2 minutes, till they turn brown. Curried Chicken Squares

Ingredients
  • 18 slices soft white bread
  • 4 chicken wings and thighs, each
  • 3 tablespoons soft bread crumbs
  • 2 tablespoons parsley, chopped
  • 1 teaspoon curry powder
  • 1 teaspoon soy sauce
  • 1 egg yolk, lightly beaten
  • teaspoon sugar
  • cup minced green onion
  • cup peanuts, roasted
  • teaspoon Allspice
  • Black pepper
Procedure

Place the bread crumbs in plastic wrap to keep them soft. Make bread crumbs by blending them in a food processor. In a bowl, combine 3 tablespoons of bread crumbs along with the chicken, green onion, allspice, curry powder, sugar, black pepper, peanuts, soy sauce, and parsley. Mix everything properly. Now roll the slices of bread with a thin rolling pin and cut each slice in half. Keep 1 tablespoon of the chicken mix on each slice. Brush the beaten egg yolk on the edges and fold the slices of bread in half. Make a square shape and pinch on the edges to seal them. Deep-fry them for about 4 minutes each as you keep turning them occasionally. Remove from the oil once they turn golden brown and drain them on some paper towels. Serve immediately.

Ingredients
  • 2 tablespoons green bell pepper, chopped
  • 2 eggs, beaten
  • 2 cups fine dry bread crumbs
  • 1 lbs lean bulk pork sausage
  • 1 lb cooked ham, ground
  • 1 tablespoon brown sugar, packed
  • 1 teaspoon dry mustard
  • cup milk
  • cup onion, chopped
  • Oil, for deep frying

Take a large bowl to combine ham, sausage, bell pepper, onion, bread crumbs, eggs, milk, brown sugar, and mustard together. Heat the oil at 360F and make 1 inch small balls from the mixture. Put the ham balls in the oil very carefully and fry them till they turn brown and crispy. This will take about 3 to 4 minutes. Drain the ham bites on the paper towels and serve them with a piquant sauce.

Double Mango Chimichangas

Ingredients
  • 16, 6 inch flour tortillas
  • 4 cups of inch mango slices, diced
  • 2 teaspoons orange peel, shredded
  • 2 teaspoons ginger, grounded
  • 1 egg white, beaten with 2 teaspoons cold water
  • 1 tablespoon brown sugar
  • 1 teaspoon vanilla
  • 1 teaspoon cornstarch
  • 1 teaspoon ground cinnamon
  • teaspoon ground nutmeg
  • cup dried cranberries or cherries, or combination
  • cup dried mango, cut into inch pieces
  • cup orange juice
  • Vegetable oil, for deep frying
  • Confectioner's sugar for dusting
Procedure

Preheat the fryer at 360F. Take a pan to combine the dried fruit and orange juice. Boil the ingredients and remove from heat to let it sit for about 5 minutes. This will help plump the fruit. Drain the fruit and discard the liquid. In a bowl, mix in the diced mango, plumped fruit, brown sugar, orange peel, and vanilla. In another bowl, mix in cornstarch and ginger together and mix in the mango bowl. On a skillet, heat the tortillas over medium heat and cover them under paper towels. One by one, place the tortillas on the kitchen countertop and scoop 2-3 tablespoons of the mango mixture on the bottom half. Make sure you drain any excess liquids from the mango mixture and leave an inch of space on the tortillas from the bottom. Fold them properly and brush the egg mixture on the top of each tortilla. Fold the sides as well and let the egg whites dry before you place them the fryer. Fry the chimichangas in the hot oil and let them turn golden brown. This will take about 4-5 minutes. Make sure you don't add too many chimichangas together. Drain them on some paper towels and sift confectioner's sugar over them. Serve immediately.
