Today we will learn one of the most beautifully made, mouth-watering and delicious recipe - Fried Green Tomatoes. This recipe basically comes from the southern part of India and has proved to be one of the best recipes, ending in the top recipe list around the world. It goes well with anything as a side-dish or as a breakfast.
Ingredients
1) 4 tomatoes: Make sure you chose firm, medium-sized light green tomatoes for this recipe as the taste and everything basically depends on the quality of tomatoes.
2) Salt: any season salt of your choice for taste
3) Pepper: for taste
4) A cup full of Olive oil/vegetable oil or bacon grease
5) 2 Eggs
6) 1 cup bread crumbs (you can choose to add more if you like)
7) 1/4 cup milk
8) 1/4 cup cream
9) Flour/Cornmeal
Preparation:
Cut the tomatoes in slices of about 1/4 inch thick. Salt the tomato slices from both the sides and sprinkle pepper on them.
Pour beaten eggs, water and milk in a bowl and prepare a mixture. If you want to make it rich in taste and are not worried about adding extra calories to your body then you can add some rich cream (sugarless cream) to the mixture. Trust me adding cream will surely enhance the taste.
Dip the salted/peppered tomato slices in eggs mixture; make sure the slices are well covered with the mixture. Sprinkle the flour/meal once on slices to form a uniform thick layer of the flour/meal is formed around the slices.
If you are not a calorie conscious and don't mind making this dish richer in taste, then you can once again perform the above step. Doing so will also make the tomatoes crunchier and enhance the taste many folds.
Next, sprinkle grated cheese of your choice on the slices and dip them in fine bread crumbs. The bread crumbs layer should not be thick as it will change the taste of the dish, but should be enough to give the taste of fried bread after we fry the slices in oil/grease. Remember, use of cheese is just to enhance the taste of the dish and can be considered as an optional part of the procedure.
Pour oil/grease in a pan, make sure the oil/grease covers the base of the pan and should not be in excess. The oil/grease should be hot enough to sizzle tomato slices and not burn them. Fry the tomato slices till the side on the pan turns golden/brown in color, typically it takes about 4 to 6 minutes. Repeat the procedure for the other side of the slice.
Once cooked from both the sides, take off the slices and keep them gently on a paper towel to get rid of excess oil.
Serve hot with your choice of decoration!
