Choosing The Right Egg Substitute For Vegans

By Donald Cook

The vegan trend is growing more and more and there began to appear a lot of vegan options in several countries. You can now buy vegan ice-cream, burgers, all sorts of sweets or foods right from the supermarket. Another even healthier option would be to cook and bake your own, to our own taste. And since we all crave some cake from time to time, you must be wondering what a good egg substitute for vegans would be.

The good news is that there are several that you can use, depending on what you want to cook. Some of them are sweeter, such as the substitutes from fruits, so they are great in cakes. If you want to bake something with vegetables, avocado has a plain taste and would be perfect. Let's discuss a bit the various healthy alternatives available.

One of the easiest and most common option is to create a mix with 1 tablespoon of flaxseed and 3 tablespoons of water. Let it sit for 5 minutes and then it is ready to be used. It has quite a neutral taste and color so can be used in various food items.

Chia seeds are very used lately due to their increased nutritional value. Also, they expend in water and create some sort of a pudding, making them a perfect egg replacement as well. Mix 1 tablespoon of chia seeds with 3 tablespoons of water and wait 5 minutes. This can be used in various recipes, but take into account its darker color.

Store-bought vegan egg replacements are also an option and they can be found online or in stores, depending where you live. Most of them will produce a mix with a lighter texture than the ones created with seeds. Some of these mixes are even gluten-free, but best read the ingredients and find the best one for you. Make sure to check the instructions on the package before and follow them closely to get the best outcome.

Some fruits also make a great egg replacement, especially for cakes and cookies. It is very affordable, as probably everyone has some of these in the kitchen or pantry. You can puree bananas or pumpkin or even use mashed sweet potato, avocado or butternut squash. If you cannot get or do not have these, try using unsweetened applesauce. Pear butter is also an option, if you like pears.

Choose them based on the recipe you have and take note that some of the fruits have a strong taste or color. The applesauce would be the plainest one, and you can hide the color from the more orange purees if you add them into a coffee or chocolate cake. Also, chocolate and bananas mix well in terms of taste as well.

Now that you know what to substitute the egg for, here are some recipe ideas that you can try: various types of cookies, such as almond flour or pumpkin chocolate chips one. You can also make some amazing vegan muffins with fruit puree and flaxseeds or pancakes, using only flaxseed as substitute. Or why not, invent your own combinations based on your own ideas and taste and experiment. Either way, there are so many options that you can try and surely you will find the perfect ones for you.
