Is Test Tube Meat Safe?


With the growing demand for meat, scientists the world over are now looking at developing different options, and test tube meat or in vitro meat happens to be one of them. Simply put, it is meat created in a laboratory. As with any laboratory-derived product, people are bound to be apprehensive about it. As the concept is not fully developed yet, several questions can be raised about its viability. However, it would not be justified to toss it aside just because it doesn't feel right or sound right.

In vitro meat is not to be confused with imitation meat, which is created from vegetable protein, and is given a "meat-like" taste. Unlike imitation meat, test tube meat is derived from animal stem cells. The meat-eating community, however, is divided over the safety aspect of consuming this type of cultured meat. This brings us to the question - is test tube meat safe enough to eat? We need to understand the creation process to find the answer to this question.

Developing Test Tube Meat
Consumable meat is nothing but animal muscle. The method being employed currently involves extracting stem cells from animal muscles and treating them with protein, which converts these cells into fleshy parts. These loose or structured muscle cells have fibers with multiple nuclei. These muscle cells are then placed under stimulation which makes them fuse. Then comes the part where the meat is stretched by mimicking the exercise motion, which actually "develops" the muscle. The muscle fibers thus obtained are then minced to make your regular pound of flesh.

This is an absolutely elementary explanation to what is an exceedingly complicated process. By complications, I'm not referring to the ethical side right now, but it is the entire conversion process of the stem cell into a fully grown piece of meat, is what the scientists are grappling with at the moment.

Safety Aspects of Test Tube Meat
Test tube meat is primarily seen as a healthier option. As a lab-created product, it is possible for scientists to diminish its fat content. Along with that, it may be possible to inject it with omega-3 fatty acids to enable consumers to benefit from it.

As it will be created in a closed environment, test tube meat is expected to be free of harmful chemicals and infected animals. With the reduction in cattle farming, we can expect a dip in the occurrence of mad cow disease, avian and swine flu and salmonella contamination.

Environmentalists do have their concerns, but overall, it does seem that creating in vitro meat won't inflict large-scale damage to our planet. Its production is expected to curb costs as the resources required are lesser as compared to traditional meat. Lower greenhouse gas emission is another advantage.

Animal welfare organizations are applauding the efforts taken to produce in vitro meat. As the process is conducted with stem cells, it does not involve any type of torture, which is usually the trademark of certain slaughter houses indulging in unethical cattle farming.

Concerns Regarding Test Tube Meat
In vitro meat is considered genetically modified. This does not spell disaster straightaway, but in the opinion of some experts, changes in its DNA pattern could make it carcinogenic.

The taste and texture of the meat is something that is under the scientists' scanner. This variety of meat can possibly fall short of any finicky meat eater's expectation.

From the ethical point of view, when you recreate a natural procedure in a laboratory, one can question the extent that science can go to, and its implication on our future generations.

In vitro or test tube meat cannot be considered a distant dream anymore, with scientists expecting to put a test tube burger on our plates by the end of 2012. It would certainly be interesting to note how people receive it. With scientists heralding it as a welcome solution to our planet's food crisis, we cannot afford to completely ignore the skeptics too. Whether or not test tube meat proves itself to be a boon or a bane, remains to be seen.

Recipe for Fresh Creamy Tomato Soup

Ingredients
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 celery ribs, finely chopped
  • 4 large fresh Florida tomatoes, peeled, cored, seeded, and chopped
  • 1 teaspoon sugar
  • 2 cups chicken broth
  • cup heavy cream
  • 2 teaspoons chopped fresh dill weed or 1 teaspoon dried
  • Salt and freshly ground pepper to taste
Method
  • Take a medium-sized saucepan and melt the butter in it.
  • Add celery and onion and make a saute over medium heat, for around 5 minutes.
  • Keep on stirring so that it does not get brown. Rather do not let it get too brown.
  • Stir the tomatoes, add sugar and simmer it after covering it and cook for around 6 - 8 minutes. Cook till they become soft.
  • Make a smooth puree out of the vegetables in a food processor.
  • Put the puree back again on the saucepan and stir it.
  • Heat the soup thoroughly and add seasoning for taste. There you are - you have made creamy tomato soup recipe with fresh tomatoes.
Recipe for Homemade Cream of Tomato Soup

Ingredients
  • 3 tbsp olive oil
  • 1 large onion, chopped
  • 2 crushed garlic cloves
  • 2 celery sticks, chopped
  • 200 gm carrots, chopped
  • 1 bay leaf
  • 1 large sprig of fresh thyme
  • 750 gm ripe plums or vine-ripened tomatoes, roughly chopped
  • tsp sugar
  • Salt and freshly ground black pepper
  • 200 ml passata
  • 500 ml vegetable stock
  • 100 ml single cream
  • Dry sherry
  • Crusty bread and butter, to serve.
Method
  • Heat olive oil in a large sauce pan and cook the onion over gentle heat, till it softens but do not allow it to get brown.
  • Now add the celery, carrots, garlic, bay leaf and thyme to the onion.
  • Cook for around 7 minutes, stirring occasionally, to avoid vegetables from sticking to the base.
  • Add the chopped tomatoes and sugar. Follow this by seasoning them properly with salt and pepper.
  • Stir in the passata and vegetable stock and cook for a few minutes.
  • Reduce the flame, cover the mixture and let it cook for around 30 minutes, till the vegetables become tender.
  • Removing the bay leaf and thyme, blend the soup in a food processor.
  • In case you want the soup to be really smooth, pass it through a sieve and then comes the cream, splash of sherry and seasoning, as per requirement.
  • Pour into bowls and then serve with the bread.

Ingredients
  • 2 (29 oz.) cans of diced tomatoes
  • 2 stalks of chopped celery
  • 2 cloves of minced garlic
  • lb. of chopped mushrooms
  • 1 finely diced onion
  • 1 chopped red bell pepper,
  • 1 tbsp. of margarine
  • 2 tbsp. of all-purpose flour
  • 1 tsp. of white sugar
  • Beef stock
  • tsp. of dried basil
  • tsp. of dried rosemary
  • tsp. of dried thyme
  • 1 (3 oz.) package of cream cheese
  • Salt and pepper to taste
  • 3 tablespoons chopped fresh parsley
  • 2 baked potatoes (depending on the quantity of soup)
Method
  • Take a buttered baking dish and put tomatoes in it.
  • Add celery, garlic and red pepper and cook for around 25 minutes after covering this mixture.
  • Meanwhile, melt the butter on a medium flame and cook mushrooms and onion over medium flame for around 8 minutes.
  • To this after it gets cooked, add sugar, beef stock, flour, basil, thyme and rosemary.
  • Keep this mixture stirring constantly till it boils and then add baked potatoes, letting it boil again.
  • Cover this and let it cook for around 30 minutes and while it cooks, blend the cream cheese in a bender.
  • Once it becomes all creamy and yummy, add it to the soup. Before you serve this lip smacking soup piping hot, add salt and pepper.

Serves 4

Ingredients

For the tahini sauce:
3 tbsp warm water
2 tbsp tahini
4 tsp freshly squeezed lemon juice
1 tsp honey
1/2 tsp ground cumin
1 clove garlic, minced

For the eggplant:
2 eggplants (about 12 oz each)
3/4 tsp kosher salt, divided
1 small onion, chopped
1/4 cup fresh breadcrumbs
1/4 cup chopped flat-leaf parsley
1 tbsp tahini
2 tsp olive oil
1 1/2 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp freshly ground black pepper
1/4 tsp cayenne pepper
2 large eggs
2 cloves garlic, minced
1 3/4 cups chickpeas

For the relish:
1 cup chopped seeded tomato (I used kumatos)
1/2 cup chopped seeded cucumber
1/2 red onion, vertically sliced thinly
1/2 cup coarsely chopped flat-leaf parsley
1 tbsp balsamic vinegar
1 tbsp olive oil

Instructions

To prepare the sauce, whisk together the warm water, tahini, lemon juice, honey, cumin and garlic in a small bowl. Season with salt to taste. Set aside.

Preheat the oven to 475.

Slice the eggplants in half lengthwise. Score the cut sides with a crosshatch pattern. Place facedown on a parchment-lined baking sheet. Bake for 7 minutes or until slightly tender and brown.

Remove from the oven and carefully scoop out the pulp, leaving a 3/4-inch edge. Reserve the pulp for another use. Season with salt.

Combine 1/2 tsp salt, onion, breadcrumbs, parsley, tahini, olive oil, cumin, coriander, black pepper, cayenne, eggs, garlic, and chickpeas in the bowl of a food processor. Process until smooth. Season to taste.

Spoon the chickpea mixture evenly into the 4 eggplant shells. Bake for 25 minutes or until the eggplant halves are tender and the chickpea mixture is lightly brown.

Combine the tomato, cucumber, red onion, parsley, balsamic, and olive oil in a bowl. Stir to combine.

Place one eggplant half on each of 4 plates. Drizzle with tahini sauce and top with relish.

Lebanese Sugared Donuts Recipe

These donuts are best eaten immediately after they are fried.

1 tablespoon active dry yeast
1 teaspoon sugar
½ cup warm water
3 cups flour
1 teaspoon salt
1/3 cup canola oil, plus canola oil for frying
3/4 cup warm water
Sugar for coating the donuts

Proof the yeast by dissolving it in ½ cup water with the sugar and letting it activate for about 15 minutes.

Whisk together the flour and salt. Create a well in the center and add the oil and proofed yeast mixture. Slowly work the wet ingredients into the dry, adding the 3/4 cup water slowly. Hold back ¼ cup and only as necessary to create a soft dough. Knead the dough gently for just a couple of minutes.

Coat the dough with about 1 tablespoon of oil, cover with plastic wrap and a kitchen towel, and let rise in a warm spot until doubled, about 2 hours.

Divide the dough into 8-10 balls. Let rise, covered with plastic wrap and a kitchen towel, on a lightly floured work surface for 20 minutes.

Fill a medium sauté pan with enough canola oil to reach 1/3 of the way up. Heat over medium high heat until a tiny ball of dough placed in the oil bubbles up immediately.

Be careful not to over heat the oil, or the donuts will brown too quickly and will not cook through the inside.

Stretch three balls of dough at a time into rustic, oblong shapes and poke a hole in the middle. Keep the rest of the dough balls covered to prevent them from drying out and forming a skin.

Fry three donuts at a time, turning over with tongs when deep golden brown. Transfer to a plate lined with paper towel, and sprinkle with sugar while they’re still hot, and enjoy.

Doused in caramel syrup and smothered in thick custard, this simple yet luxurious bread dessert is quick to prepare and requires minimal cooking.

Ingredients

 
8 pieces French toast (see note)
750 ml (3 cups) milk
600 ml cream
75 g (⅓ cup) caster sugar
½ cup cornflour
½ cup plain flour
100 g ground pistachios

syrup
440 g (2 cups) caster sugar
1 tbsp lemon juice
2 tbsp rosewater

Preparation

 
For the syrup, place the sugar and 375 ml (1½ cups) water in a saucepan and bring to the boil, stirring to dissolve the sugar. Add the lemon juice, reduce the heat to a gentle boil and cook for 15 minutes until light golden. Remove from the heat and stir in the rosewater.

Arrange the toast to cover the base of a 23cm square or rectangular dish. Pour half the sugar syrup over the toast, reserving the remainder.

Place the milk, cream, sugar, cornflour and plain flour in a saucepan, and whisk until well combined. Place the saucepan over medium heat and cook, whisking continuously, for 8 minutes until thick with a yoghurt-like consistency. Pour the custard over the toast, bang on the bench a few times to settle the custard, and set aside to cool for 1 hour. Sprinkle with the ground pistachios and refrigerate for 2 hours.

Serve cold with extra syrup to the side.

Note
The French toast in this recipe is commercial, toasted bread slices sold in packets in most continental delis. To make your own French toast, remove the crusts from 8 slices of white bread and bake in an 180˚C oven for 8–10 minutes until completely dry.

In a large skillet, take butter, sugar and milk and boil it on a medium flame. Make sure that you constantly stir the mixture to prevent it from getting burned. When it reaches boiling point, reduce the heat and cook for five minutes, while stirring continuously. After four minutes, remove the skillet from the heat and add the marshmallow creme and chocolate chips to it. Keep on stirring the mixture till the chocolate and marshmallow melts fully. Fold in the vanilla and nuts into the mixture and mix again. Transfer this mixture into pans and allow them to set at room temperature for four hours. Once the fudge is set completely, cut it into one inch squares and serve.

Cream Cheese Fudge Recipe

Ingredients
  • Cream cheese, softened, 6 ounces
  • Confectioners sugar, sifted, 4 cups
  • Walnuts, chopped, 8 ounces
  • Vanilla extract, teaspoon
  • Unsweetened chocolate, melted, 4 ounces
Preparation

Take cream cheese in a medium-sized bowl and whisk till it becomes smooth in texture. Add vanilla essence to it along with confectioners sugar and beat well after each addition. When the mixture becomes smooth, fold in the melted chocolate and stir until it is fully blended. Grease an 8 inch pan lightly and pour the mixture into it. Place in the refrigerator for an hour and when it sets completely, take it out of the refrigerator and cut them into pieces.

Vanilla Fudge Recipe

Ingredients
  • Milk, 300 ml
  • Unsalted butter, 100 grams
  • Castor sugar, 350 grams
  • Vanilla extract, 1 teaspoon
  • Little oil for greasing
Preparation

In a heavy based saucepan, take butter, milk and sugar together. Place the saucepan on a medium flame and bring it to boil, while stirring continuously. By this time, the sugar must be dissolved and the butter should be melted completely. Boil this mixture for 15 - 20 minutes and do not stop stirring as it may get burned. With the sugar thermometer, check the temperature of the mixture after boiling it for 15 - 20 minutes. When the temperature reaches 115 degrees C, remove from heat and allow it to cool for five minutes. With a spoon whisk the mixture for sometime till it begins to thicken. Take a square cake tin and grease it with oil. Fill the cake tin with the fudge mixture and let it set for 3 - 4 hours. Once the fudge is fully set, cut them into small square pieces and store in air tight containers.

Peanut Butter Fudge Recipe

Ingredients
  • Crunchy peanut butter, cup
  • Butter, cut into 8 pieces, cup
  • Confectioner's sugar, sifted, 1 box
  • Milk, cup
  • Salt, teaspoon
Preparation

In a mixing bowl, combine crunchy peanut butter, sugar, salt, milk and butter together. Transfer these mix ingredients in a microwave friendly dish or in a glass casserole dish. Place in the microwave and cook for two minutes. With the help of a spoon, stir the mixture until all ingredients are fully blended. Grease an 8 inch glass cake dish and pour the mixture into it. Place it in the refrigerator for an hour or till it becomes firm. Once done, cut into squares and enjoy.

How To Cook Lasagna With A Little Twist (rajiv tiwari)

Lasagna can be made in a large number of ways. Unlike the usual recipes, this one adds an element of surprise to your dish. Lasagna is a largely flexible noodle that you can experiment with to create your very own recipe. Butternut Squash Lasagna is one of those unusual dishes that will leave you surprised with its yummy taste. Try playing with some of the ingredients and see if you can come up with a lasagne recipe of your own.

Butternut Squash Lasagna

Ingredients:
* ? butternut squash chopped into cubes
* Extra-virgin olive oil for drizzling
* Salt and pepper to taste
* ? pound ruffle-edge lasagna noodles, broken
* 2 cloves garlic, finely chopped
* ? medium head endive , chopped
* About ? cup chicken stock
* ? cups fresh ricotta cheese
* A small handful of thinly sliced sage leaves
* ? cup grated Parmigiano-Reggiano
* 1 tablespoons butter
* 1 tablespoons flour
* 1 cup whole milk
* Freshly grated nutmeg to taste
* ? pound Italian Fontina cheese

Directions:

1. Heat the oven to around 400?F.

2. Put the squash on a baking sheet and lightly add a drizzle of extra-virgin olive oil and salt and pepper to taste. Cook till the squash is golden at edges and tender.


3. Bring a large pot of salted water to a boil and cook the lasagna a little lesser than al dente.

4. While the water is cooking the lasagna, heat a tablespoon of extra-virgin olive oil over medium flame in the pan. Add garlic and stir, then add endive and wilt. Add a little salt and pepper to taste, add stock and simmer gently until ready to use.

5. In a bowl mix the together ricotta, sage, salt, pepper and cheese.

6. In a saucepan, melt the butter over medium heat. Whisk in flour, cook and then add the milk. Raise the flame and add salt, pepper and nutmeg to the sauce. Let sauce thicken and taste to check seasoning.

7. Drain the lasagna noodles and add to the pot. Stir in ricotta cheese mixture, mix thoroughly and then add the roasted squash and endive.

8. Transfer to a casserole and pour the milk sauce. Cover with small layer of Fontina cheese and place in the oven to bake till it's bubbly and brown.

9. Serve your lasagna hot!

Mujadarra (Middle Eastern Lentils and Rice with Caramelized Onions) Recipe

Mujadarra (pronounced moo-jha-druh and also spelled Mujadara, Mujaddara, Mujadarah, and Mujadarrah) is a humble middle eastern dish of lentils, rice, and caramelized onions. This is a recipe where the flavor becomes much more than you'd expect from the simple ingredients used.


Rinse lentils, then add water and cook at a low simmer 20-30 minutes, until lentils are soft. Cover the cooked lentils and let sit so they absorb most of the water.


Start cooking 3/4 cup long grain rice, either following the directions on the package or using a rice cooker like I did. I used Uncle Ben's Converted Rice, which is a low-glycemic type of white rice, but Basmati rice would also be good. (Keep the rice warm until you need it.)


Peel onions, then cut into quarter-slices to make 3 cups sliced onions. (I increased the amount of onion; next time I might increase the onion even more.)


Heat olive oil in large heavy pan, then add onions and start to brown over medium-low heat, stirring every few minutes. (Don't rush the browning step; you want the onions to slowly get golden brown.)


Here are my onions after ten minutes, just starting to get brown.


I cooked the onions about 15 minutes more, until they were mostly browned like this, for a total of 25 minutes browning time.


Remove about half the onions to a paper towel, and let them drain and crisp while you finish the dish. These crispy onions bits are served on top of the cooked lentils and rice.


Add cumin to the rest of the cooked onions and saute 1-2 minutes.


Transfer the cooked lentils to the pan with the onions, leaving behind any liquid that hasn't been absorbed. Season lentils with salt and freshly ground black pepper and cook 2-3 minutes.


Then gently mix the cooked rice into the lentils and onions, heating for a minute or two if needed. Serve hot or warm, with some of the crisp onions topping each serving.

Mujadarra (Middle Eastern Lentils and Rice with Caramelized Onions)
(Makes 4 generous servings, recipe adapted from Paula Wolfert's The Cooking of the Eastern Mediterranean.)

Ingredients:

 
3/4 cup long-grain white rice (I used Uncle Ben's Converted Rice)
1 cup brown lentils, rinsed
3 cups yellow onions, cut into quarter slices (or more)
1/3 cup olive oil (use high-quality olive oil with good flavor for this dish)
1/4 tsp. ground cumin
salt and fresh ground black pepper to taste

Instructions:

 
Cook rice in water following package directions, or cook in a rice cooker. When rice is done, cover and keep warm until you add it to the lentils.

Rinse lentils, then place in heavy pot with a tight fitting lid, add 1 quart water, and let lentils simmer over very low heat uncovered until they are soft (about 20-30 minutes, but cooking time will depend on how fresh the lentils are so keep checking until they are soft but still have a slight bite to them.) When lentils are cooked, cover and let water them absorb any leftover water.

While lentils cook, chop onions. Heat olive oil in heavy frying pan, then add onions, reduce heat to medium-low and start to brown onions, stirring every few minutes. Continue to cook onions, stirring often, until they are deeply browned and caramelized, about 20-25 minutes. Don't rush this step; the onions will be bitter if they're cooked at high heat.

When onions are browned, remove half the onions to drain on a paper towel to crisp. Sprinkle 1/4 tsp cumin into the rest of the onions in the pan and saute 1-2 minutes.

Use a slotted spoon to transfer the cooked lentils to the pan with the onions, leaving behind any water that's not absorbed. Season the cooked lentils and onions with salt and freshly ground black pepper and cook 1-2 minutes to blend flavors.

Gently mix cooked rice into the lentils and caramelized onions, heating for a minute or two if the rice is not hot. Put Mujadarra on a serving dish, top with crispy caramelized onions, and serve hot or warm.

This is great served with Middle Eastern Tomato Salad on the side.

Middle Eastern Tomato Salad Recipe

This salad would have to be one of my very favorite ways to eat tomatoes when they're fresh and sun-ripened. It's actually very good made with Roma tomatoes since they have less seeds and the flesh is firm, but you can make it with any type of tomatoes.

(4-6 servings, Massoud's recipe)

All amounts are approximate. Feel free to use more or less of some ingredients, depending on your own preferences.

Ingredients:

 
1 cup finely diced cucumber (remove seeds if they are large)
1 cup finely diced tomato
1 cup finely diced onion (I often use sweet Vidalia onion)
1 cup finely chopped parsley (more or less, to taste)
1 cup finely chopped mint (more or less, to taste)
2-3 T olive oil, or more to taste
1-2 T fresh lemon juice, or more to taste
salt, pepper to taste

Instructions:

 
Chop cucumber in pieces less than 1/2 inch and put in colander. Add a generous amount of salt and let sit while you chop other ingredients. (If the tomatoes are juicy I add them to the cucumbers and let the juice run out.)

Cucumbers, tomatoes, and onions should be cut in same-size pieces, and parsley and mint should be chopped very finely. (You can use a food processor to chop the mint and parsley if you wish.) When all ingredients are chopped, combine in mixing bowl.

Mix in olive oil, lemon juice, salt and pepper. (Start with a bit less and add more until it tastes right to you. I find it does not need a great deal of dressing to taste good.) Serve immediately.
