Lamb and pistachio pizzas with pomegranate molasses recipe

This easy pizza recipe showcases the flavours of the middle-east, with its lamb, pistachio and pomegranate toppings.

INGREDIENTS 11
DIFFICULTY EASY
MAKES 2 pizzas


 Ingredients

120g soft goat’s cheese
1/3 cup (80g) sour cream
1/4 cup mint leaves, plus extra leaves to serve
Juice of 1/2 lemon
250g lamb backstrap, trimmed
1 tbs Dijon mustard
1 tbs olive oil
2 Lebanese breads
250g chargrilled eggplant slices, cut into strips
1 long green chilli, sliced
Roughly chopped pistachios and pomegranate molasses (see note), to serve


Method

Step 1
Preheat the oven to 200°C and line 2 baking trays with baking paper.

Step 2
Place the goat's cheese, sour cream, mint leaves and lemon juice in a bowl and stir until smooth. Season and set aside.

Step 3
Coat lamb with Dijon mustard and season. Heat oil in a large non-stick frypan over medium heat. Add lamb and cook, turning, for 2-3 minutes for medium-rare. Remove from the pan and set aside to rest for 5 minutes, then cut into thin slices.

Step 4
Spread half the goat’s cheese sauce over 1 Lebanese bread, then add half the eggplant. Repeat with remaining Lebanese bread and toppings. Place pizzas on prepared trays and bake for 8 minutes or until golden. Scatter with the lamb and return to the oven for a further 2 minutes or until just heated through.

Step 5
Top pizzas with chilli, pistachios and extra mint leaves, then season and drizzle with pomegranate molasses.

Ingredients

Olive oil spray
1 red onion, halved, thinly sliced
1 red capsicum, halved, deseeded, thinly sliced
300g lean lamb mince
1 tsp ground cumin
1 tsp ground paprika
1 tsp ground coriander
2 tbs currants
2 tbs chopped fresh continental parsley
80ml (1/3 cup) passata (tomato pasta sauce)
2 pieces wholemeal Lebanese bread
1 bunch rocket, trimmed, shredded
130g (1/2 cup) low-fat natural yoghurt


Method

Step 1
Preheat oven to 220°C. Heat 2 large baking trays in the oven for 10 minutes.


Step 2
Meanwhile, heat a large non-stick frying pan over medium heat. Spray with olive oil spray. Add the onion and capsicum. Cook, stirring occasionally, for 4-5 minutes or until soft. Increase heat to high. Add the mince. Cook, stirring with a wooden spoon to break up any lumps, for 4-5 minutes or until the mince changes colour. Add the cumin, paprika and coriander. Cook, stirring, for 1-2 minutes or until aromatic. Remove from heat. Stir in the currants and parsley.


Step 3
Divide passata and mince mixture among bread. Place on the trays. Bake for 8-10 minutes or until bases are crisp.


Step 4
Cut each pizza into quarters. Top with rocket and serve with the yoghurt.

* Balsamic vinegar- for a bold flavor
* Water - doesn't add any flavor but gives you the consistency you desire.

In usual 1/4 to 1 cup addition of liquid will give you the desired consistency. If you want it to spread easily, adding more of olive oil will be helpful. Once you are done with this, add spices to adjust to the liquid levels. Add more salt and pepper and taste. With this, your instant pizza sauce is ready to use. You can use right away or keep it in refrigerator for a couple of hours so that the taste develops further. The choice is yours!

A Frozen Pizza Recipe For Those Lazy Days (rajiv tiwari)

Pizza is a universal favourite of people. Sometimes, when you're just not in the mood to cook, a frozen pizza recipe can be a blessing. Just get your pizza recipe out, get it ready and enjoy yourself in front of your favourite TV show in peace.

Ingredients For Pizza Recipe:

* 1 pound pizza dough, store-bought
* 1 cup tomato sauce

Ingredients For Toppings:

* Saut?ed Mushrooms
* Cooked and sliced sausages
* Diced bell peppers
* Bacon (optional)
* 2 cups shredded Mozzarella cheese

Directions:

1. Pre-heat the oven to 230?C to start your pizza recipe.

2. Put a baking sheet on a middle of the oven to cook the pizza recipe as it heats.

3. Roll out the pizza dough in half to make two separate pizzas for your lazy night. Place the ball of dough in the middle of a clean, floured surface and flatten it to your preferred thinness. Repeat the process with the other ball of dough.

4. Slide the base of the pizza recipe onto the baking sheet in the oven. Make sure the bottom is slightly floured.

5. Bake for around 5 minutes until the pizza dough is puffy and dry on the top, but still very pale.


6. Let the base for the pizza recipe cool completely.

7. Top the pizza recipes with all your favourite toppings. Spread some of the tomato sauce on the pizzas, add the toppings, and finally sprinkle the cheese generously over the top.

8. Place the pizzas on a baking sheet and freeze, uncovered, until solid for around 3 hours.

9. Once frozen, remove the pizza recipes from the freezer and wrap them first in cling film. Then, wrap the pizzas in a layer of aluminium foil to ensure that your pizza stays fresh and moist and doesn't go stale and dry in the freezer.

10. You can freeze your pizza recipes for up to three months.

11. Whenever you feel ready to eat the pizzas you've made, start off by preheating the oven to 290?C.

12. If you have a baking stone for the pizza recipe, place it in the oven as it heats. Unwrap the pizza recipes and slide them into the oven for a delicious meal.

13. Bake for 8-10 minutes, until the crust is dark brown and the cheese is slightly brown, but not burnt. It should be nicely bubbling.

14. Your pizza recipe is ready to be devoured by one and all!

* Four teaspoons of active dry yeast
* Four cups of all-purpose flour, plus a few spoons more for kneading
* One teaspoon of salt

Ingredients

2 tablespoons olive oil
1 medium (150g) brown onion, chopped finely
1 clove garlic, crushed
500g minced lamb or beef
1/4 teaspoon cayenne pepper
2 teaspoons ground cumin
1/2 teaspoon ground cinnamon
1 cup (250ml) beef stock
2 medium (280g) tomatoes, chopped finely
1/3 cup (50g) pine nuts, toasted
1/4 cup coarsely chopped fresh flat-leaf parsley
1/3 cup coarsely chopped fresh mint
1 x 400g Afghan bread (or 2 x 150g
24cm round traditional pizza bases)
190g jar chilli pesto
1 cup (280g) Greek-style yogurt
1 teaspoon sumac

Preparation


1. Preheat oven to 220°C (200°C fan-forced).
2. Heat oil in a large frying pan. Add onion and garlic. Cook, stirring, until onion is soft. Add mince. Cook, stirring, until browned. Add pepper and spices; stir until fragrant.
3. Add stock and tomatoes to the pan. Cook, stirring, over a medium heat until most of the liquid is evaporated. Remove from the heat, stir in the pine nuts, parsley and half the mint.
4. Place Afghan bread or pizza bases on greased oven trays. Top each pizza base with pesto; then press mince mixture onto pesto, leaving a 3cm border. Bake on the lower shelf in a hot oven for about 12 minutes or until browned lightly.
5. Serve pizzas topped with yogurt and sprinkled with remaining mint and sumac.

Lamb mixture suitable to freeze.
Not suitable to microwave.

Ingredients

Yoghurt Bread Dough
250 g (9 oz) minced lamb, not too lean
1 tomato, seeded and finely diced
1 small purple onion, finely diced
1⁄3 cup flat-leaf parsley leaves, finely shredded
1 teaspoon ground allspice
1 red bullet chill, seeded and finely diced
1 teaspoon pomegranate molasses
Salt and pepper

Preparation

Don’t buy lamb mince from the supermarket for this recipe as it’s far too fatty. You don’t want the lamb to be too lean, however. Ask the butcher for leg lamb with some fat, but no sinews.

Prepare the dough. Preheat the oven to its highest temperature.

To prepare the filling, place the mince on a large chopping board and put all the other ingredients, except for the salt and pepper, on top. Use a large knife to chop and mix everything together until well combined. It should be the consistency of a fine paste. Season with salt and pepper.

Roll dough out into rounds of 10 cm (4 in) in diameter and brush with olive oil. Smear the mix thinly over the rounds and bake for 3 minutes.
