Ingredients

1 Cup of cracked wheat (bulgur)
1/2 Kg ground meat (beef or lamb)
1 Grated onion
1/2 teaspoon Black pepper
1 teaspoon Salt
1 teaspoon Allspice or kibbee spices
1/4 Ice cold water or crushed ice


For filling
1/4 Kg ground meat (beef or lamb)
1/2 Onion, diced
1/4 cup toasted pine nuts
1/2 teaspoon Allspice or kibbee spices
1 Tablespoon vegetable oil
salt and pepper to taste
oil for frying

Method

- Wash the cracked wheat very well. Let drain and squeeze out the excess water.
- Take the cracked wheat and place it on a tray to dry for about 2 hours.
- Grate the onion, mix it with the cracked wheat and add the meat. Mix them together until well combined.
- Add your seasonings. Salt, pepper, and allspice. Mix once again very well.
 

TIP: You can mix these ingredients in a food processor so that they become better combined.

Preparation for the filling
 

- Heat up the oil, then add your diced onion, cook until golden in color. -Add the meat to the onions and cook until the meat is done.
- Add your salt, pepper and allspice. -Drain any excess fat from the filling. -Add the toasted pine nuts.


Making Kibee Balls
 

- Soak your hands in cold water. Take a small piece of dough. -Push with your index finger into the center of the ball making an indentation or place for the filling to go.
- The hole should be long in length in order to fill the dough ball. -Once this is done take a small amount of the filling and place it into the ball.
- Close the ball with your index finger and thumb. Repeat this step with every ball.
- Once all of them are made, you will heat up your frying oil and place each Kibbee Ball into the hot oil for frying.
- Once they are medium brown in color, take them out of the oil and place on a paper towel to soak up the excess oil.

Ingredients

For knuckles
1 Kilo beef knuckles, cut into 3 cm thickness
mixed vegetable (carrot, onion, celery), cut into cubes
4 whole cardamom pods
2 bay leaves
2 pieces Mastic
salt and pepper
1/4 cup lemon juice

For stuffed grape leaves
3 cups medium grain rice, washed and drained
1 cup dill, parsley, cilantro, mint leaves, chopped
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
Salt and pepper
1 cup tomato, chopped
1/4 cup olive oil
1 jar grape leaves, rinsed, drained
1 medium onion, sliced
1 medium potato, sliced

Method

- Wash knuckles with salted water, rinse and pat dry.
- Heat around 8 cups of water, add mixed vegetables and spices, bring to a boil, and add knuckles.
- Boil, reduce heat and skim off scum off the top.
- Season with salt and pepper, simmer until knuckles are tender, lift, drain and let cool.
- Preheat oven to 180 degree Celsius.
- Mix rice in a bowl with herbs and spice.
- Add tomato and half the olive oil (Little amount of chopped knuckles can be added to the mixture).
- Lay grape leaf flat on a plate (shiny side down).
- Place about one to two teaspoon of the rice mixture near bottom of the leaf (stem end), the amount of stuffing will depend on the size of the leaves.
- Press stuffing into a small sausage-like shape.
- Fold the sides of the leaf over the filling toward the center, then roll up firmly but not too tight into a cylinder shape.
- Put remaining oil in a pot, Line bottom with the sliced onion and potato.
- Layer rolled leaves in the pot in circular way, make sure to leave a hollow space in the middle to place the knuckles.
- Cut some knuckles into medium cubes after deboning it.
- Distribute them between layered grape leaves.
- Place remaining boned knuckles in the middle of the pot, make sure it?s surrounded with stuffed grape leaves.
- Cover grape leaves and knuckles with stock and lemon juice.
- Cook over medium heat until boiling, cover and reduce heat, simmer for about an hour or until knuckles are tender and grape leaves are cooked, serve warm.

“You can make this cake either square or round and I love having this for breakfast with a cup of tea or as a sweet treat in the afternoon with cup of coffee,” says Jackie Chahine of Profiterole Patisserie. You will need a 20 cm cake pan for this recipe.

Ingredients


1 tsp ground aniseed
185 ml (¾ cup) milk
250 g caster sugar
125 ml (½ cup) vegetable oil
300 g (2 cups) plain flour
1 tsp baking powder
2 tsp ground turmeric
80 g (½ cup) pine nuts
whipped cream, to serve

Preparation


Cooling time: 1 hour

Preheat oven to 180°C. Place aniseed and 80ml water in a small saucepan over high heat and bring to the boil. Cook for 2 minutes or until reduced to about ¼ cup. Strain and cool.

Whisk milk and sugar in a jug until sugar dissolves. Whisk in oil and aniseed mixture.

Sift flour, baking powder and turmeric in a large bowl, then make a well in the centre. Pour in milk mixture, whisking to combine, then pour into a greased 20 cm cake pan lined with baking paper. Scatter with pine nuts and bake for 45 minutes or until a skewer inserted into the centre comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely. Serve sfouf with cream.

This is a classic Lebanese recipe. It is a hearty, spiced stew that is easy to prepare, and you simply cannot enjoy it without the revered rice pilaf with vermicelli.

Ingredients


2 tbsp olive oil
2 tbsp unsalted butter
1 brown onion, finely chopped
4 cloves garlic, finely chopped
400 g beef or lamb mince
2 tsp baharat spice mix (see below)
2 tsp salt
150 g carrots, cut into ½ cm pieces
2 tbsp tomato paste
375 ml (1½ cups) chicken stock
1½ cups frozen peas
Greek yoghurt, to serve


Rice
2 tbsp unsalted butter
2 tbsp olive oil
1 cup broken vermicelli pasta
1 litre (4 cups) boiling water
2 cups medium grain rice, washed and drained
2 tsp salt


Baharat
½ tsp ground allspice
¼ tsp ground black pepper
¼ tsp ground cinnamon
¼ tsp ground cumin
¼ tsp ground coriander
¼ tsp ground nutmeg

Instructions


The following recipe has been tested and edited by SBS Food and may differ slightly from the podcast.
Combine all baharat ingredients together.

Heat the oil and butter in a medium saucepan over medium-high heat. Add the onion and cook for 8–10 minutes until starting to turn golden.  Add the garlic, cook for 1 minute, then add the mince and cook, breaking up lumps with the back of a spoon, for 4–5 minutes until browned. Add the 2 tsp baharat and 1 tsp salt and cook for 1 minute. Add the carrot and tomato paste, stir to combine then add the remaining 1 tsp salt and the stock. Bring to the boil, reduce the heat and simmer, covered, for 20 minutes. Remove the lid and cook for a further 4–5 minutes until the sauce thickens slightly. Stir through the peas and cook for 2 minutes. Season to taste.

Meanwhile, to make the rice, heat the butter and oil in a heavy-based saucepan over medium-high heat.  Add the vermicelli and fry for 3–4 minutes, stirring, until golden.

Immediately add the water, rice, and salt. Cover, bring to a boil, reduce the heat to low and cook, covered, for 12–14 minutes or until all the water is absorbed and the rice and pasta are tender.

Serve the stew and rice together with yoghurt on the side.


Cook's notes

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.

Pancakes - Beyond any Comparison (Jim Doyle)

Gluten-free buttermilk pancakes
Ingredients
Gluten-free flour blend as per the need
Cane sugar 2 tsp
Gluten-free baking powder 1 tsp
Baking soda 1 tsp
Salt ? tsp
Buttermilk 1 ? cup
Or Milk 1 cup
White vinegar 1 tbsp
Olive oil 2 tbsps
Large egg 1
Vanilla extract
? tsp
Method of preparation

First, take a mixing bowl and mix up all the dry ingredients. Whip it properly. Take another mixing bowl and coalesce the ingredients such as olive oil, egg and vanilla in that bowl. Whip it nicely so that all the ingredients are properly incorporated. Then, pour the milk into a bowl if you are preparing the buttermilk on your own. Introduce white vinegar into this. Allow it to stay for at least 5 minutes. Then, include the ingredients like olive oil, egg and vanilla extract into the milk mixture. Whip it well. Mix the milk mixture with the dry mixture and whip it until you get a smoth mixture. Add 1-2 teaspoons of milk, if the mixture seems to be exceedingly thick. Take a skillet and heat it over moderate temperature. Slightly rub the skillet with the olive oil. Pour ? cup of the batter onto the skillet if the skillet is of medium size. If the skillet is fairly large, then, pour 1/ 3 cup of the mixture onto the skillet. Cook the mixture until the bottom turns brown in colour and bubbles start coming up on the surface. Then, flip the side and cook the other side as well so that both sides are ready. Take the rest of the batter and repeat the process. When it is cooked well, turn the heat off and let it cool. Wrap the pancakes and place them in a plastic freezer bag. Serve them when they are thoroughly cooled and set.


Pumpkin pancakes

Major ingredients
Flour 1 ? cups
Baking powder ? tsp
Sugar 1 ? tbsps
Salt ? tsp
Baking soda ? tsp
Vegetable oil 1/8 cup
Egg 1
Buttermilk 1 ? cups
Pureed pumpkin 1/3 cup
Pumpkin pie spice 1 ? tsps
Vanilla 1 tsp

Method of preparation

Take a bowl of medium size and mix up the ingredients such as flour, baking powder, sugar, salt and baking soda. Whip it nicely so that all the ingredients are properly incorporated. Then, introduce the combination of the beaten egg, vegetable oil and 1 ? cups of buttermilk and stir it well so as to get a perfect mixture out of it. When these ingredients are properly combined, include the ingredients like pumpkin, vanilla, and pumpkin pie spice and stir it well until you get an even mixture. Take a frying pan and heat it over average temperature. If you are using griddle, then heat it over 350 degrees F. Rub the pan or griddle slightly with vegetable oil and pour ? cup of the mixture out into the pan.
Cook the side until it becomes golden brown in colour. Flip the side and cook the other side as well. Spray the pancake turner with a non stick spray so that you can flip the sides. Repeat the process using the remaining batter.

Stir Fry Sauce

Stir fry sauce is generally that ingredient simply responsible for flavor to your stir fry. Most often, stir fry are made of Oriental ready to use sauces like the soy sauce, the hoisin flavor, the fish flavor, the teriyaki flavor, the chili oil flavor, the oyster sauce and more. These specially prepared them to solely to provide a type of flavor that brings saltiness, sour or bitterness and sweetness to your dish. If one desires for a little heat on the dish, the chili oil of red chili flakes comes in handy.

For you to get started with here are a few concoctions that may help you begin creating a perfect stir fry at home.

1. THE ALL PURPOSE STIR FRY SAUCE:
INGREDIENTS:
1 ¼ cup of soy sauce
one cup of oyster flavor
One cup of maple syrup (Not the maple flavored only syrup, or simply use brown sugar instead)
½ cup rice vinegar
¼ cup Dijon mustard, to taste.
These flavors are found on Oriental stores near you.

THE PROCEDURE:
Mix all the ingredients in a mixing bowl until they are smooth. Then you can store them in a sealed bottled on your refrigerators and can last for a week. Shake the bottle before using the flavor in your frying. Can be good for beef, pork, shrimps, scallops and even squid fries. Enjoy them at home.

2. THE KUNG PAO ASIAN SAUCE:
THE INGREDIENTS:
Soy sauce
Sherry wine
Water
Garlic
Red chili peppers, rice vinegar
Ginger
This is a ready-made stir fry flavor available in the supermarkets and they are great with beef, shrimps, squids, and pork. Just use 2 to 3 tablespoons of this concoction and you are on your way to a perfect stir fry serving 2 to 3 persons. But if you want added flavor, you can use additional tablespoons of this sauce plus grated ginger and sliced onions.

3. THE OERIENT EXPRESS STIR FRY SAUCE: This takes 10 minutes to prepare and makes four servings.
INGREDIENTS:
2/12 cup of chicken broth, fat free or low sodium type
1/2 cup corn starch
½ cup soy sauce, lite and low sodium type
½ cup light corn syrup
½ cup dry sherry
¼ cup cider vinegar
Two cloves of garlic, minced
Two teaspoon of grated fresh ginger
¼ teaspoon of ground red pepper or hot pepper flavor

THE PROCEDURE:
In a 1 ½ quart jar with tight fitting lid, combine the chicken broth, the cornstarch, the soy sauce, the corn syrup, the sherry, the vinegar, the garlic, the ginger and the red pepper. Shake them well. Can be refrigerated up to three weeks. But shake them well again before using in a stir fry. This recipe makes about four cups. In stir frying you can add the flavor according to the recipe of your stir fry. If you are only cooking for four servings, then you only need one half cup of the sauce or even less if you don't want it bubbling with the sauce.

Italian Potato Salad


Ingredients: 

1 pound of green beans 
1 pound of boiling potatoes (red skins) 
1 red onion-slice 3 ripe vine tomatoes 
1.2 to ¾ cup of olive oil 
¼ cup of red wine vinegar 
1 teaspoon of oregano 
Salt to pepper to taste 

Directions:

Boil potatoes with the skins on. 
Cook the beans in salted water until tender. 
Cut the tomatoes and slice the onions. 
When beans and potatoes are done, cut them into smaller pieces. 
Put into a large salad bowl and toss with oil and vinegar.  Season the salad with salt, pepper and dried oregano.

Ingredients

1 cup soft butter
1/2 cup powdered sugar
1/2 teaspoon vanilla
2 cups all-purpose flour
1/2 teaspoon baking soda

Flavor Options

 
2 teaspoons instant coffee OR
2 teaspoons strawberry or mint syrup

Garnish Options

 
-Whole nuts, coarsely chopped pistachios, coffee beans, or chocolate chips, for topping
-Cocoa powder or ground cinnamon, for sprinkling
-Melted dark and/or white chocolate, for drizzling
-Date Paste, for filling

Method

-Preheat oven to 170˚C (350˚F).
-In bowl of electric mixer, cream butter with powdered sugar and vanilla on medium speed. Mix flour with baking soda and beat into butter mixture on low speed. Add coffee or syrup and beat until combined. (Or, divide dough and add different flavoring to each one.) Cover and refrigerate for 30 minutes.
-Shape dough into walnut-size balls and place, well apart, on a baking sheet. If topping with nuts, lightly press thumb into center of each ball and top with one whole nut.
-Bake for 15 minutes, until set but not browned.
-Let cool, then arrange on serving plate. If desired, sprinkle with cocoa powder or cinnamon, or drizzle with melted chocolate before serving.

Shaping variations

 
-Roll dough into a cylinder. Cut diagonally into slices, then drag the tines of a fork over the top to decorate. Bake, let cool, then drizzle with chocolate.
-Shape dough into walnut-size balls. Press thumb into balls to make cups. Fill cups with smaller balls of date filling. Mold dough over filling, pressing seams to seal. Roll into date-shaped fingers. Roll in ground pistachios, then bake.

Fried Semolina Pastries Recipe

Ingredients

1 1/2 cup flour
1/3 cup semolina
1/3 cup clarified butter
1 tablespoon yeast
3/4 cup water
1 1/2 tablespoon sugar
Oil for frying
Sugar syrup (cold)

Method


- Mix flour and semolina in a deep pot.
- Add butter (hot) and mix it well together.
- Place yeast in a warm water with sugar till dissolve .
- Add the yeast mixture to the flour mixture.
- Add the water and mix it well until you got firm dough, leave to rest for 10 minutes, roll out and cut into a small finger’s shape.
- Press on each finger on a grater to take the curved shape with the groves of the grater.
- Fry in a hot oil.
- Remove from fryer and place on a kitchen towel, dip in the syrup. Remove to get rid of excess syrup and serve.

Ingredients required for cooking:
1)Boiled Spinach leaves (Palak) leaves (2 cups)
2)Boiled potatoes (5-6 piece)
3)Bread Slice (7-8)
4)Oil
5)Paste of Green Chilly & Ginger
6)Coriander leaves
7)Salt as per the taste
8)? tsp Garam Masala,
9)? tsp Amchur powder or Lemon (on availability)
10)? tsp Sugar

Method
1)Boil Spinach (palak)and remove all the water and make the paste.
2)Boil potatoes and smash it
3)Grind the bread in mixture
4)In one bowl, mix Spinach, palak, potatoes then
5)Then add all the masala, like paste of green chilly & ginger, salt , gram Masala, Amchur powder & sugar.
6)Mix all the items slowly and properly.
7) Roll each kabab into small balls or the shape you want.
8)Take a deep fry pan, heat the Oil and deep fry the kabab till it become golden brown.
Healthy and yummy food is ready to serve. Do serve it with the tomato sauce,red or green chutney or with schezwan sauce to make your starter Hara Bhara Kabab more delicious.

Mention the word mustard and the image of a deli-hotdog sandwich immediately pops up into mind. It wasn't exactly a favorite condiment in the house, no thanks to its pungent and tangy taste. But as you learn things along the way, it came to my attention that mustard seeds are known to be very healthy for the human body. Hence, the oils or sauces made from these seeds may have several therapeutic health benefits.

Gourmet mustards, as they are famously marketed, are made from the seeds of a mustard plant which is a vegetable related to broccoli, Brussels sprouts and cabbage. While there are approximately forty different varieties of mustard plants, there are three principal types commonly used for culinary purposes namely:

* Black Mustard (brassica nigra) - a round hard seed, smaller and much more pungent.
* White Mustard (brassica alba) - milder than their black counterpart, usually yellow in color, and are the ones used to make American yellow mustard.
* Brown Mustard (brassica juncea) - dark yellow in color, has a pungent acrid taste and is the type used to make Dijon mustard.

This incredible condiment can be used in its whole seed form, as a ground powder or grinding it into a smooth paste. To make flavors interesting, people came up with spices to add into its paste such as pepper, garlic, and paprika, along with a dash of salt. Research has it that there is no part of the mustard plant that cannot be utilized. Pancakes - Beyond any Comparison (Jim Doyle)

Gluten-free buttermilk pancakes
Ingredients
Gluten-free flour blend as per the need
Cane sugar 2 tsp
Gluten-free baking powder 1 tsp
Baking soda 1 tsp
Salt ? tsp
Buttermilk 1 ? cup
Or Milk 1 cup
White vinegar 1 tbsp
Olive oil 2 tbsps
Large egg 1
Vanilla extract
? tsp
Method of preparation

First, take a mixing bowl and mix up all the dry ingredients. Whip it properly. Take another mixing bowl and coalesce the ingredients such as olive oil, egg and vanilla in that bowl. Whip it nicely so that all the ingredients are properly incorporated. Then, pour the milk into a bowl if you are preparing the buttermilk on your own. Introduce white vinegar into this. Allow it to stay for at least 5 minutes. Then, include the ingredients like olive oil, egg and vanilla extract into the milk mixture. Whip it well. Mix the milk mixture with the dry mixture and whip it until you get a smoth mixture. Add 1-2 teaspoons of milk, if the mixture seems to be exceedingly thick. Take a skillet and heat it over moderate temperature. Slightly rub the skillet with the olive oil. Pour ? cup of the batter onto the skillet if the skillet is of medium size. If the skillet is fairly large, then, pour 1/ 3 cup of the mixture onto the skillet. Cook the mixture until the bottom turns brown in colour and bubbles start coming up on the surface. Then, flip the side and cook the other side as well so that both sides are ready. Take the rest of the batter and repeat the process. When it is cooked well, turn the heat off and let it cool. Wrap the pancakes and place them in a plastic freezer bag. Serve them when they are thoroughly cooled and set.


Pumpkin pancakes

Major ingredients
Flour 1 ? cups
Baking powder ? tsp
Sugar 1 ? tbsps
Salt ? tsp
Baking soda ? tsp
Vegetable oil 1/8 cup
Egg 1
Buttermilk 1 ? cups
Pureed pumpkin 1/3 cup
Pumpkin pie spice 1 ? tsps
Vanilla 1 tsp

Method of preparation

Take a bowl of medium size and mix up the ingredients such as flour, baking powder, sugar, salt and baking soda. Whip it nicely so that all the ingredients are properly incorporated. Then, introduce the combination of the beaten egg, vegetable oil and 1 ? cups of buttermilk and stir it well so as to get a perfect mixture out of it. When these ingredients are properly combined, include the ingredients like pumpkin, vanilla, and pumpkin pie spice and stir it well until you get an even mixture. Take a frying pan and heat it over average temperature. If you are using griddle, then heat it over 350 degrees F. Rub the pan or griddle slightly with vegetable oil and pour ? cup of the mixture out into the pan.
Cook the side until it becomes golden brown in colour. Flip the side and cook the other side as well. Spray the pancake turner with a non stick spray so that you can flip the sides. Repeat the process using the remaining batter.

Chopped onion rings

Skinned chicken pieces

Yogurt

Boiled eggs

Basmati rice

Saffron

Laban

Ground spices (chili powder, salt, black pepper, cumin, cardamom. Bay leaves, brown cardamom, cinnamon, coriander, ginger)

Whole spices (cardamom, bay leaves, peppercorn, fennel, brown cardamom, cinnamon)

Method

• Put little oil in a pan over heat, add onion and fry until it becomes golden brown.

• Season chicken pieces with ground spices.

• Add chicken to the onion and turn occasionally and well over the heat.

• Add chopped garlic and ginger and mix well.

• Add stock and lay the tomato rings.

• Add yogurt and little green corianders.

• Wash rice well and soak in water. Simmer in a pan over heat after adding water with spices.

• Drain water off rice after it is cooked.

• Top beryani and yogurt with rice and stick boiled eggs in it.

• Soak saffron in laban until the laban color turns orange.

• Cover surface with butter foils. Cover the pan and place in the oven until everything is well cooked.

• Put in serving dish and garnish with green coriander.

• Garnish with little almonds and serve.

Chicken Majboos Recipe

Ingredients

2 chickens about (1 ½ kilo)
2 tablespoon mix ground spices (coriander, cumin, cinnamon, cloves, cardamom, peppercorn, loomi (dried lime)
2 garlic cloves, chopped
¼ cup lemon juice
½ cup oil
2 large onions, chopped
6 cups water
3 cups basmati rice, washed and socked
Salt
2 each (cinnamon sticks, loomi. cardamom, peppercorn)
½ tablespoon turmeric
3 boiled eggs
½ teaspoon saffron socked in 1 tablespoon rose water
Coriander leaves for garnish

Method

-Wash chicken under running water, pat dry.
-Mix half the ground spices with garlic, lemon juice and 2 tablespoon oil in a bowl.
-Rub chicken inside out with the mixture, marinate for half an hour.
-Heat ¼ cup oil in a large sautéing-pan over medium high heat, add onion.
-Sauté onion, stir from time to time until for about 10 minutes or until translucent.
-Stir in the rest of the ground spices, mix well.
-Stuff the chicken with ¼ cup of the onion mixture, tie the legs and tuck the wings.
-Stir the chicken with the rest of the onion over medium high heat, until golden brown.
-Add water and let boil, reduce heat cover and simmer for about 45 minutes.
-Lift the chicken and keep aside.
-Drain rice and add to chicken broth, season with salt and whole spices, until boiling.
-Reduce heat, cover and simmer for about 25 – 30 minutes.
-Preheat oven to 180 degrees C.
-Sprinkle saffron mixture over rice.
-Brush oven dish with the rest of the oil.
-Spread a rice layer, put chicken and boiled eggs on top, cover with the rest of the rice.
-Cover with foil lightly, bake for about 20 minutes.
-Sprinkle with chopped coriander serve warm.

Ingredients

1 Kilo fish slices
1/2 teaspoon ground cloves
1/2 teaspoon cinnamon
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 teaspoon ground ginger
1 teaspoon ground cardamom
1 cup flour
Salt and pepper
Oil for frying


Sayyadiya Sauce:
4 Tablespoons oil
2 large onions, sliced
3 garlic cloves, sliced
2 large tomatoes, sliced
1 cup tomato juice
1 cup fish or chicken stock
2 Tablespoons tomato paste
1 teaspoon mix spices

Method

- Wash fish under running water, pat dry.
- Combine spices with flour in a plate, season with salt and pepper.
- Place fish pieces on flour mixture, pat down then turn and pat on the other side to coat fish with thin layer of flour, shake off excess flour.
- Heat oil in a large heavy pan over medium high heat.
- Fry fish pieces until golden brown then flip over to the other side.
- Remove and drain on a paper towels.
- Heat oil in a large skillet, add onion and saut? for about 5 minutes.
- Add garlic and stir for two minutes.
- Stir in the rest of ingredients and season with salt and pepper.
- Let sauce until boiling, then reduce heat and simmer for about 15 minutes or until thicken.
- Spoon sauce into serving plate, arrange fish slices on top, serve warm.
