Kung Pao is a part of Chinese food and the original version of this dish is made using chicken. Ingredients
  • Broccoli florets (rinsed, cut into 1-inch-wide pieces) - 1 pound
  • Cornstarch - 1 tablespoon
  • Deveined shrimp (shelled) - 1 pound (41 to 50 per pounds)
  • Fat-skimmed chicken broth - cup
  • Hot chili flakes - teaspoon
  • Long-grain white rice - 1 cups
  • Soy sauce - 2 tablespoons
  • Minced fresh ginger - 1 tablespoon
  • Minced garlic - 2 teaspoons
  • White wine vinegar - 2 tablespoons
  • Sugar - 1 teaspoons
  • Salt - teaspoon
  • Salad oil - 1 teaspoon
  • Salted peanuts (chopped, roasted) - cup
Procedure

Take a 3 quart pan and add rice and water to it. Bring the mixture to boil and cook the rice until all the water is absorbed into it, about 7 to 10 minutes. Then, lower the heat and cook the rice until it becomes tender to bite, for about 10 to 15 minutes. Transfer the rice to a bowl and keep it aside. Now, take a mixing bowl and combine soy sauce, vinegar, cornstarch, broth, sugar, salt and chili flakes. Mix these ingredients to form a smooth paste. Take a nonstick frying pan and add half cup of water and broccoli to it. Place the frying pan over high heat and bring the water to boil. Once the mixture comes to boil, reduce the heat to medium level and simmer the mixture. Cook until the broccoli becomes tender and then drain the broccoli and keep it aside.

Now, take a saucepan and add oil, ginger and garlic and place the saucepan over high heat. Once the garlic becomes brown, add shrimp and stir the mixture. Stir the mixture until the shrimp becomes opaque and then add cooked broccoli to it. Pour in the cornstarch mixture to the shrimp and keep stirring the mixture until it boils. Once the shrimp is cooked properly transfer it to a bowl and sprinkle peanut over it. Serve this yummy dish with the cooked rice.

  • Small dried red chillies (halved) - 8
  • Salt - teaspoon
  • Small onion (diced) - 1
  • Vegetable oil - 2 tablespoons
  • Roasted cashews - 1 cup
Procedure

On top of the double boiler, add water and gelatin, and allow the mixture to turn soft for about 4-5 minutes. Keep the double boiler simmering, add glucose and shortening in the gelatin mix. Stir everything properly till the shortening has melted properly. Now bring the gelatin mix and egg white to pour in the confectioner's sugar mixture. Blend the ingredients on low speed till you get them combined properly. Turn the speed to high for about 10 minutes or till you get a stringy dough mix. Keep the paste in refrigerator for about 24 hours to let it rest. The next day, bring the paste out and let it return to room temperature. Take some shortening in your fingertips and knead the dough once again.

Ingredients
  • 4 large egg whites
  • 4 teaspoons shortening
  • 12 teaspoons Tylose
  • 2 lb bag of 10X powdered sugar
Procedure

Tylose is a substitute product of gum tragacanth which can be used for making gum paste. It's less expensive, easy to make, comes white in color, and holds better in high humidity. To make the paste with Tylose, take a blender and add the egg white in. Break the egg whites by turning the blender on for about 10 seconds. Keep cup of sugar aside and slowly add the rest of it in the blender. At this moment, reduce the speed of the blender to one and make a soft, smooth icing. Once you get this consistency, turn the blender to two and measure out Tylose in a bowl. Add it slowly to the blender when the icing looks shiny and smooth. For the next few seconds, turn the speed back up and blend properly. Stop the blender and scrap everything off the sides and bottom. The sugar that we set aside goes on the surface of your workstation. Place the mixture on top of the sugar, take the shortening in your hands, and start kneading the paste. You need to make a soft and not sticky dough. Pinch with your fingers to check the consistency. If the dough comes off and doesn't stick to you, then it's ready. Bring couple of plastic bags and double pack the gum paste in it. Keep the paste in refrigerator for about 24 hours to let it rest. The next day, bring the paste out and let it return to room temperature. Take some shortening in your fingertips and knead the dough once again.

Ingredients
  • Juice of grapefruits-2
  • Juice of oranges
  • Honey (2 tsp)
  • Sections from a grapefruit (1)
  • Fresh/frozen strawberries (1 cup)
  • Sliced strawberries (1/2 cup)
Preparation
You need to pour the grapefruit juice and the orange juice along with the honey and the strawberries in the blender. Blend this combination until it smoothens. Once done, strain this into 2 chilled glasses. If you love to have your juice chilled, then you can even chill the fruits in advance or mix some ice cubes in the blender. Add some protein powder if required. Use the sections of grapefruit and strawberries as toppings. Your yummy drink is ready to be served!

Breakfast Wrap

  • Whole egg (1)
  • Egg whites (2)
  • Reduced fat shredded cheese (1 tbsp)
  • Low fat flour tortilla (1)

Ingredients

50g butter, softened
1/2 teaspoon finely grated lemon rind
2 teaspoons chopped fresh dill
1 teaspoon chopped fresh chives
6 large slices white bread
2 small Lebanese cucumbers, peeled
 

Method

Step 1 Combine butter, lemon rind, dill and chives in a small bowl. Season. Spread 1 side of each bread slice with butter mixture.
Step 2 Using a vegetable peeler, peel cucumber into ribbons. Divide between 3 bread slices. Top with remaining slices.
Step 3 Trim crusts. Cut each sandwich into 3 fingers. Serve.

Baharat beef kebabs with chickpea tabouli recipe

Ingredients

2 tsp smoked paprika
2 tsp ground cumin
1 tsp freshly ground black pepper
1 tsp ground coriander
1/4 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cardamom
1/4 tsp ground cloves
1.2kg beef scotch fillet, cut into 2cm pieces
Olive oil spray
2 cups store-bought tabouli
400gcan chickpeas, rinsed, drained
Lebanese bread, to serve
Eggplant dip, to serve

Method

Step 1 Combine the paprika, cumin, pepper, coriander, cinnamon, nutmeg, cardamom and cloves in a large bowl. Add beef and toss to coat. Thread beef on to 12 skewers. Preheat grill on medium-high. Spray skewers with oil. Cook for 3-4 minutes each side for medium or until cooked to your liking.

Step 2 Combine tabouli and chickpeas in a bowl. Divide the bread, skewers and chickpea tabouli among serving plates. Serve with eggplant dip.

Notes

Tip: Stop bamboo skewers from burning by first soaking them in cold water for 20 minutes. Skewers can be made up to 24 hours ahead and stored in the fridge, which will help the flavours develop.
