Try This Entirely Different Mexican Black Bean Salad Recipe

Good food is something you just cannot resist. When it comes to Mexican food, the temptation is even more serious. It doesn't take too much time or too much effort to prepare some of those recipes, and you will be more than satisfied. For example, you could try this entirely different Mexican black bean salad recipe. It's not something you will find in any Mexican restaurant, but it is based on similar principle.

Basic ingredients are the same, black beans from the can, canned sweet corn, avocado, sliced, lime juice, chili powder, garlic, minced, a clove or two, or more if you prefer, salt and pepper and olive oil. But, here are also two hard-cooked eggs, two potatoes cooked in skin, peeled and sliced, red sweet pepper, also sliced, white vinegar and green onion.

So, first you have to slice your onion and mix the slices with salt, white vinegar and lime juice. Cover the bowl and leave it aside or, even better, in your fridge. Rinse and drain beans and corns and combine all other ingredients together. In the end, add prepared onions and more salt or oil, or other spices of your choice, if needed. Coriander leaves will round this combination.

Here is another simple recipe you might like. So, basic ingredients such as corn and black beans, oil, salt, pepper and chili pepper. And then, three slices of toast bread, 200 grams feta cheese, 250 grams young spinach and oregano. Rinse and drain canned ingredients first, and if spinach leaves are large, cut them into strips.

Grease the pan and bake toast diced into small cubes, salted and sprinkled with oregano. In another bowl, combine lime juice, salt, pepper, sliced chili peppers, garlic and oil. Add fresh spinach. If the leaves are larger, cut them into strips first. Add toast cubes, diced feta and all other ingredients and mix well.

For this unusual recipe you will need a grill. Take one small eggplant, one zucchini, one green and one red sweet pepper, one can black beans and a can of sweet corn, one large spoon of acetto balsamico, olive oil, three cloves minced garlic, two tortillas, one avocado, juice of one or two limes and grated hard cheese, and, of course, salt, pepper and chili powder.

So, slice and dice what has to be sliced and diced first. Grill eggplant slices or strips, zucchini and sweet green pepper, and then grill tortilla stripes as well. In the meantime, make a dressing. Combine oil, juice, spices, garlic and acetto. Mix well and add grilled ingredients, while still hot, and all other ingredients. Sprinkle with grated cheese and leaves of basil or coriander.

This simple salad is really nice one. Use corncobs, black beans, avocado, garlic, salt, pepper, chili powder, lime juice, red sweet pepper, sliced and good olive oil. Then, add chopped dried tomatoes and green salad cut into stripes. Mix well and serve in tortillas, for example, or as a side dish, you will simply enjoy in it. It really doesn't take too much time to prepare, and tastes great.
