Ingredients: 2 chicken breast halves, one tablespoon vegetable oil, one packet tortilla chips, Mexican cheese shredded, one cup fresh chopped tomatoes.

Procedure: Fry the chicken breast pieces in oil until they are brown. Now, in a baking dish, spread a layer of corn tortilla chips. Top it with a layer of fried chicken and tomato. Sprinkle cheese on the top. Repeat these layers and bake in oven at 350 degree F for 15 minutes. Remove as soon as the cheese has melted. Serve it with salsa, cream or gaucamole.
Recipe 2: Cheesy Tachos
Ingredients: Ground beef, Mexican cheese, taco shells, shredded lettuce, chopped tomatoes one cup, one can black olives, salsa.

Procedure: Cook the beef in oil until it's brown. Add cheese and olives and mix until the cheese melts. Fill the taco shells with this mixture. Top these with the chopped tomatoes, lettuce and serve with salsa.

Recipe 1: Mexican Marranitos
Ingredients: Brown sugar 2 cups, one egg, 250ml milk, vanilla extract, cinnamon and baking soda one and half teaspoon, one cup unsulfured molasses, 6 cups flour, one egg beaten.

Procedure:In a large bowl, add cream, egg, milk and vanilla extract and mix well. Later add baking soda, cinnamon, and molasses. Add this mixture to flour and mix until it dough. Spread the flour uniformly on a lightly floured surface and cut it into various shapes with a cookie cutter. Take a greased cookie sheet and keep the cookies onto it. Brush the cookies with the beaten egg. Bake in oven for 15 minutes until the cookies appear dry.
Recipe 2: Mexican Wedding Cheesecakes
Ingredients: 3 cups whipped cream, French vanilla pudding mix, one and half cups chopped nuts, one and half cups flour, powdered sugar, butter.

Procedure: Preheat the oven to 350 degree F. Melt butter, add nuts and flour on the baking dish and press the mixture over the base. Bake the mixture for 20 minutes. Meanwhile, mix cheese, sugar and whipped cream together and layer it on the top of the flour mixture. Make vanilla pudding and make a second layer out of it. Make a third layer of whipped cream and garnish it with chopped nuts.

Ingredients: tortillas, fat free Chile 2 cups, salsa one cup, cheddar cheese shredded, one tablespoon cream.

Meanwhile, grill the tortillas as well and later top these with Chile mixture along with cheese and cream. Roll the tortillas and serve them with extra salsa.
Recipe 2: Chicken Enchiladas
Ingredients: Corn tortillas, chicken breasts cooked, green onions, fresh cilantro half cup, 2 cups chicken broth, one cup cream, minced onions, cheddar cheese shredded, chopped green chillies, butter, one-fourth cup flour, vegetable oil.

Procedure: Fry the tortillas for 5 minutes on a frying pan. Place chicken, onion and cheese on the tortillas and roll them up. Bake them in oven. Meanwhile, melt butter in a pan and add flour stirring constantly. Later add chillies, cream until a thick consistency is obtained. Serve the enchiladas with this mixture and garnish with green onions and cilantro.
