Spiced Ginger Sauce (for Almond Fried Chicken)

  • 1 tsp whole peppercorns
  • cup dry white wine

For this recipe, your chicken is first coated in a mixture of cheese, breadcrumbs, almonds, salt and pepper and fried. Flour and egg whites are used for binding. For the sauce, add the ginger and spices to a mortar and pestle, and grind them lightly. If you don't have this contraption, you can put the spices into a bag and pummel it with a rolling pin. Mix the vinegar, white wine and soy sauce together in a small saucepan. Add the crushed spices to the pan, and heat on low. Bring it to a boil and let it bubble for eight minutes. This crispy chicken is made by coating the chicken in mixture of crushed peanuts and cracker, paprika, salt, pepper and egg white and baked. To make the sauce, squeeze the grated ginger to extract as much juice as possible from it. Add the ginger juice to orange juice, and then add the sweet chili sauce, peanut butter, soy sauce, lime juice and peanut oil and give it a good whirl in a blender or food processor, until well blended. Serve along with chicken.

Apricot Ginger Sauce (For Fried Chicken)

Ingredients
  • 1 chicken stock cube, crumbled
  • 1 tbsp lemon juice
  • 200 g dried apricot
  • 1 tbsp ginger juice
  • 2 cups water

Pour the water into a saucepan and add in the apricots and chicken stock cube. Bring the mixture to a boil and let it bubble for 6 minutes uncovered, or until the apricots are soft. Take it off from the heat and let it coll. Once it is warm, add the ginger and lemon juice, and blend till you have a smooth sauce.
