Banana muffins. Doesn't that make you want to eat one right this minute? I can't speak for you, but for me, any dessert or breakfast that has bananas in it is more than good; it's better (just trying to be funny). So basically, all types of banana recipes that can make my taste buds tingle gets a green light from me. However, in all seriousness, I love banana muffins and as I'm writing this article, I can't help but wish that somehow a plate of warm, freshly baked muffins could appear in front of me. Banana Muffins with Chocolate Chips

Ingredients
  • 250 g flour
  • 125 g granulated sugar
  • 100 g chocolate chips (milk or white)
  • 40 ml cooking oil
  • 40 ml milk
  • 3 mashed bananas
  • 1 large egg
  • 1 tablespoon baking powder
  • teaspoon salt

Before we begin making the muffins, preheat the oven at 400F. In a bowl, mix the entire egg, oil, ripe mashed bananas, and milk. Beat everything together properly. Take another bowl to add flour, granulated sugar, baking powder, and chocolate chips in. Pour the dry ingredients in with the wet ingredients and blend everything thoroughly. Place the muffin tray lined with the muffin cases. With a ladle, fill each muffin case with the batter. Keep the tray inside the oven to bake for about 20-25 minutes. Poke with a skewer to check if the muffins are cooked properly. Bring the tray out and let it sit for few times. Remove all the muffins and serve with a glass of cold milk. This recipe makes about 12 muffins.

Banana Nut Muffins

Ingredients
  • 4 mashed bananas
  • 2 cups All-purpose flour
  • 2 eggs
  • 1 teaspoons baking soda
  • 1 teaspoon vanilla extract
  • 1 cup sugar
  • teaspoon salt
  • cup chopped walnuts
  • cup unsalted butter

First of all, preheat the oven at 375F. In a bowl, add flour, eggs, baking soda, bananas, butter, sugar, and vanilla extract. Mix everything properly with a hand mixer. Make sure you get a smooth batter. In the end, add the walnuts inside. Now place the muffin tray lined with the muffin cases. With a ladle, fill each muffin case with the batter. Keep the tray inside the oven to bake for about 18-20 minutes. Poke with a skewer to check if the muffins are cooked properly. Bring the tray out and let it sit for few times. Remove all the muffins and serve with a glass of cold milk. This recipe makes about 18 muffins.

  • 2 mashed bananas
  • 2 tablespoons honey
  • 1 tablespoons polyunsaturated vegetable oil
  • 1 cup wholemeal self-raising flour
  • cup white self-raising flour
  • cup low-fat milk
  • Oil for greasing

To prepare this dessert recipe, preheat the oven at 375F. In a bowl, add mashed bananas, honey, oil, and milk; mix everything properly. Sift the flour and add in the bowl as well. Slowly, so that the flour doesn't come out, blend thoroughly. Now place the muffin tray and grease them with vegetable oil. With a ladle, fill each space with the batter. Keep the tray inside the oven to bake for about 20-25 minutes. Poke with a skewer to check if the muffins are cooked properly. Bring the tray out and let it sit for few times. Remove all the muffins and serve with a glass of cold milk. This recipe makes about 9 muffins.
