Peanut Brittle Recipes


Peanut Brittle is also known as 'Chikki' in India. The Indian Chikki has four basic ingredients - sugar, liquid glucose, peanuts and jaggery. Peanut brittle in America are prepared more or less on the same lines. Peanut Brittle are crunchy, easy to make candies. Treat yourself and your loved ones by trying out these home-made recipes of Peanut brittle.

Traditional Peanut Brittle

Ingredients

Sugar: 2 cups
Light Corn Syrup: 1 cup
Water: 1 cup
Peanuts: 2 cups
Salt: Teaspoon
Butter: 2 Tablespoons
Baking Soda: 2 Teaspoon

Preparation
  • Add sugar, syrup and water in a heavy saucepan. Heat and stir till the sugar dissolves.
  • Add salt and cook over medium heat till it reaches soft ball stage.
  • Add peanuts and continue stirring to hard crack stage.
  • Remove from the heat.
  • Quickly add the butter and baking soda, continue stirring.
  • Pour immediately into well-buttered cooling pans. Spread it evenly with the help of a spatula.
  • Cool and break into pieces
Microwave Peanut Brittle in 10 minutes

Ingredients

Sugar: 1 cups
Light Corn Syrup: cup
Raw Peanuts: 1 cups
Salt: 1/8 Teaspoon
Butter: 1 Tablespoon
Vanilla: 1 Teaspoon
Baking Soda: 1 Teaspoon

Preparation
  • Add sugar, light corn syrup, raw peanuts and salt in a 2 quart microwave mixing bowl.
  • Set the microwave on 'High' for 8 minutes. Stir the mixture after 4 minutes.
  • After 8 minutes of microwave cooking, add butter and microwave for another 2 minutes on 'High'.Take care the brittle doesn't turn too brown.
  • Remove the bowl from the microwave and stir in vanilla and soda till a light and foamy mixture is formed.
  • Spread the mixture on buttered baking sheet. Spread the mixture into a thin layer
  • Cool and break into pieces.
Peanut Butter Brittle

Ingredients

Sugar: 1 cups
Light Corn Syrup: 1 cup
Raw Peanuts: 2 cups
Peanut Butter: 2 cups
Water: cup
Butter: 2 Tablespoons
Vanilla: 1 Teaspoon
Baking Soda: 1 Teaspoon

Preparation
  • Add peanut butter in the upper pan of a double boiler over low heat.
  • Grease 2 large baking sheets and heavy 3 quart pan with butter.
  • Mix sugar, corn syrup and water in the greased pan.
  • Cook and stir the mixture over a medium flame, till it comes to boil.
  • Cook for another 15 minutes and then add 2 tablespoons butter, stirring till it melts.
  • Add peanuts and continue cooking and stirring for 5 minutes more till the mixture turns brown.
  • Remove from heat and immediately add baking soda, stirring constantly. Add vanilla and stir in the warm peanut butter in the mixture till it is well combined.
  • Pour the candy on the prepared sheets and with a spatula spread into a thin layer.
  • Let it cool and break into pieces.
Chili Peanut Brittle Recipe

Ingredients

Sugar: 2 cups
Light Corn Syrup: cup
Spanish Raw Peanuts: 2 cups
Paprika: 1 Teaspoon
Chili Powder: 1 teaspoon
Ground Red Pepper: 1/8 Teaspoon
Ground Coriander: 1/8 Teaspoon
Salt: Teaspoon
Water: cup
Butter: cup
Baking Soda: 1 Teaspoon

Preparation
  • Mix paprika, chili powder, salt, red pepper and coriander in a mixing bowl.
  • Mix sugar, corn syrup, and water in saucepan
  • Cook over medium heat, stirring constantly till the sugar dissolves.
  • Increase the heat and bring the mixture to a boil.
  • Stop stirring and cook for about 10 minutes.
  • Remove from heat and add butter and spice mixture. Stir till the butter melts
  • Add baking soda and stir till foam develops.
  • Pour the candy mixture on large greased sheets and spread into a thin layer.
  • Cool and break into pieces.
Sugar-free Peanut Butter Brittle

Ingredients

Maltitol: 1 cup
Raw Peanuts: 2 cups
Butter: 2 Tablespoons

Preparation
  • Melt the butter in a saucepan. Add Maltitol and heat on a medium flame string continuously.
  • The mixture will separate initially and then blend together again.
  • Add the peanuts and remove from flame when the color darkens. Be careful do not burn the mixture.
  • Spread on a greased sheet into a thin layer.
  • Cool and break into pieces.
You can make out if your Peanut Brittle has turned out exactly as it should by checking the color. It should not be too brown, or it means you have over-cooked it. Too light indicates use of less amount of sugar. You can store peanut brittle in an air tight container for days. A good Peanut brittle will be crispy and not soft. Peanut brittle can double up as energy bars as they contain proteins and provide instant energy.
